Soft, creamy, and naturally sweet with comforting banana flavor. The custard-like texture makes every bite rich and satisfying. A wholesome cake perfect for sharing.

Ingredients:
2 ripe bananas
2 eggs
1 cup milk
1 cup oat flour
2 tbsp honey
1 tsp vanilla

Procedure:
1. Preheat oven to 170°C (340°F).
2. Mash bananas until smooth.
3. Whisk with eggs, milk, honey, and vanilla.
4. Stir in oat flour.
5. Pour into cake pan.
6. Bake 35–40 minutes.
7. Cool before slicing.

A mega breakfast this morning for 550 calories, 27g protein and 9g fibre. I’m always really hungry the day after a long run.

I made a spinach omelette and put it in a bagel with Gouda and tomato. I then wrapped it up and cut it in half so it made me feel like I was still in London ordering from my favourite bagel place 😂

Then for breakfast dessert I had a little kefir chia pudding with berries.

Blueberry Cloud Bread (Gluten-Free Healthy Snack)
📝 Ingredients
3 large eggs (separated)
3 tbsp cream cheese (softened)
1–2 tbsp honey or sweetener (optional)
¼ tsp cream of tartar
¼ tsp vanilla extract
¼ cup fresh blueberries
👩‍🍳 Instructions
Preheat oven to 300°F (150°C) and line a baking tray with parchment paper.
In one bowl, beat egg whites with cream of tartar until stiff peaks form.
In another bowl, mix egg yolks, cream cheese, vanilla, and sweetener until smooth.
Gently fold the egg whites into the yolk mixture without deflating.
Carefully fold in blueberries.
Spoon small rounds onto the tray and shape lightly.
Bake for 20–25 minutes until golden and set.
Cool slightly before serving.
🍽️ Serving Suggestions
Enjoy as a light snack or breakfast
Serve with extra fresh berries or a drizzle of honey
Best eaten fresh and slightly warm
