Crispy Layered Potato Stacks
Ingredients
4 large potatoes
3 tbsp melted butter or olive oil
2 tbsp grated Parmesan cheese
1 tsp garlic powder
1 tsp dried thyme or rosemary
½ tsp paprika
½ tsp salt
¼ tsp black pepper
Flaky sea salt, for topping
Instructions
1. Preheat the oven to 200°C (400°F). Grease a muffin tin generously with butter or oil.
2. Peel the potatoes and slice them very thinly, preferably with a mandoline.
3. In a bowl, combine melted butter, Parmesan, garlic powder, thyme, paprika, salt, and pepper.
4. Add the potato slices and toss gently until every slice is coated.
5. Stack the slices tightly into the muffin cups, building them slightly above the rim because they shrink during baking.
6. Bake for 45–55 minutes, until the edges are deeply golden and crispy and the centers are tender.
7. Let them rest for 5 minutes, then carefully remove the stacks.
8. Finish with a sprinkle of flaky sea salt and serve hot.
Tips for Success
Slice the potatoes as thinly and evenly as possible for beautiful layers.
Don't soak the potatoes; the starch helps the layers stick together.
For extra crispiness, brush a little butter over the tops before baking.
Parmesan can be replaced with Gruyère or cheddar.
