Salmon Tartare & Cured Yolk for my "Just A Bite" series ep.66! Few things beat a good tartare in my book and I couldn't get enough of the flavors and textures of this. Ingredients: 10 oz sushi grade salmon 1 large shallot (thinly sliced). 1 large russet potato (peeled & thinly sliced). 1 lemon (zest and 1 tsp of the juice). 1/2-1 serrano (minced). 2 tsp capers (minced). 1 tsp caper brine. 2 anchovy filets (turned into a paste). 1 tsp mirin. 2 tbsp chives + more for topping. 1/2 tsp sesame oil. 1.5 tsp japanese mayo. 1 tsp dijon mustard. 1 tsp soy sauce. 2 scallions (chopped). 3 tbsp olive oil. Avocado oil for frying. 2 egg yolks (cured in tamari and mirin).
