Creamy Labneh Bowl with Blistered Tomatoes & Grilled Bread 🍅🌿
Ingredients
- The Base: Cool, thick, and velvety labneh (strained yogurt) spread evenly into a shallow bowl.
- The Warmth: Sweet cherry tomatoes roasted on the vine until bursting with rich, concentrated juices.
- The Bread: Thick slices of rustic bread grilled until deeply charred and smoky.
- The Drizzle: High-quality extra virgin olive oil.
- The Finish: A handful of fresh mint leaves and chopped Italian parsley.
Instructions
1. Blister the Tomatoes: Toss your cherry tomatoes with olive oil, salt, and pepper. Roast them in a hot oven or skillet until the skins blister, wrinkled, and burst to release their sweet juices.
2. Char the Bread: Drizzle your rustic bread slices with olive oil and press them onto a screaming hot grill pan until they develop deep, smoky char marks.
3. Smooth the Labneh: Spread a generous layer of cool, creamy labneh into the base of your serving bowl, smoothing it out with the back of a spoon to create shallow wells.
4. Assemble the Dish: Spoon the hot, jammy blistered tomatoes directly over one side of the cold labneh. Nestle your warm, crispy grilled bread right into the bowl.
