Goat Cheese & Caramelized Walnut Streusel Banana Bread
Ingredients
For the Banana Bread:
3 very ripe bananas, mashed
1/2 cup unsalted butter, melted
3/4 cup brown sugar, packed
1 large egg
1 tsp vanilla extract
4 oz goat cheese, chilled and crumbled into small chunks
1.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
For the Caramelized Walnut Streusel:
1/2 cup walnuts, chopped
1/4 cup all-purpose flour
1/4 cup brown sugar
2 tbsp cold unsalted butter, cubed
1/2 tsp ground cinnamon
1 tbsp honey (for drizzling over the walnuts)
For Garnish (optional):
1 tbsp extra goat cheese crumbles
1 drizzle of honey
1 pinch flaky sea salt
Directions
Preheat your oven to 350Β°F and grease a 9x5 inch loaf pan.
Make the Streusel: In a small bowl, rub together the cold butter, flour, brown sugar, and cinnamon until it forms pea-sized crumbs. Stir in the walnuts and honey. Set aside.
Mix the Batter: In a large bowl, whisk the melted butter and brown sugar until smooth. Stir in the egg, vanilla, and mashed bananas.
Gently fold in the flour, baking soda, and salt until just combined.
Add the Tang: Fold in the chilled goat cheese chunks very gently; you want small pockets of cheese to remain intact rather than blending completely into the batter.
Pour the batter into the prepared pan and smooth the top.
Sprinkle the walnut streusel mixture evenly over the entire surface.
Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean (avoiding any goat cheese pockets).
Let the bread cool in the pan for 15 minutes before transferring to a wire rack.
Garnish with a final drizzle of honey and a few fresh goat cheese crumbles while still slightly warm.
