🍰✨ Sweet Potato Pound Cake ✨🍠
Rich, buttery, and warmly spiced—this cozy pound cake is soft, moist, and full of comforting fall flavors in every bite 😍
📝 Ingredients:
• 3 cups all-purpose flour
• 2 cups granulated sugar
• 1 cup unsalted butter, softened
• 1 cup mashed cooked sweet potatoes
• 5 large eggs
• 1/2 cup whole milk
• 1 teaspoon baking powder
• 1/2 teaspoon salt
• 1 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 2 teaspoons vanilla extract
✨ Optional glaze:
• 1 cup powdered sugar
• 2–3 tablespoons milk
• 1/2 teaspoon vanilla extract
👩🍳 Instructions:
1️⃣ Preheat oven to 350°F (175°C) and grease a bundt pan well.
2️⃣ Beat butter and sugar until light and fluffy.
3️⃣ Mix in mashed sweet potatoes until smooth.
4️⃣ Add eggs one at a time, then stir in vanilla.
5️⃣ In another bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
6️⃣ Gradually add dry ingredients to the wet mixture, alternating with milk. Mix gently until combined.
7️⃣ Pour batter into bundt pan and smooth the top.
8️⃣ Bake for 60–70 minutes until a toothpick comes out clean.
