Perfect as a light lunch, snack or even sliced for a party platter. Sweet carrots, salty ham and melted mozzarella make the perfect combination. ⸻ What I Used: • 500 g carrots grated 1.1 lb • 3 eggs • 30 g Parmigiano 1 oz • 10 g salt 2 tsp • 120 g ham 4.2 oz • 100 g mozzarella 3.5 oz ⸻ How to Make It: Preheat the oven to 180°C 350°F. In a bowl grate the carrots. Add the eggs, Parmigiano and salt. Mix everything well until fully combined. Line a baking tray with baking paper. Spread the mixture into a rectangle and level it evenly. Bake for 20 minutes until set. Remove from the oven and gently flip it over. Fill with the ham and mozzarella. Perfect for hot days or when you want a café-style drink at home. ⸻ What I Used: • 250 g honey 8.8 oz • 2 tablespoons instant coffee • 50 ml water 3 tbsp To serve: • Ice • Milk of your choice • Chocolate shavings or cocoa powder ⸻ How to Make It: In a bowl add the honey and whisk until it becomes lighter in colour and fluffy. Add the instant coffee and water. Whisk again until thick, creamy and well combined. Fill a glass with ice, pour in your milk of choice and top with the whipped honey coffee cream. Mini No-Bake Cheesecakes | Creamy, Fresh & Without Butter A summer-perfect dessert that’s light, refreshing, and made without butter or refined sugar. These mini cheesecakes come together in minutes — no oven, no fuss — just pure creamy indulgence with a zing of lime and your favourite fruit topping. What You’ll Need: For the base • 200g digestive biscuits • 80g coconut oil For the cream • 400g cream cheese or Greek yogurt • 1 tbsp fruit compote of your choice • ½ lime zest Instructions: Blend the biscuits and mix with coconut oil until sandy and moist. Line muffin moulds with plastic wrap and press the biscuit mixture firmly into the base. In a bowl, combine the cream cheese (or yogurt), fruit compote, and lime zest. Spoon the cream mixture into the moulds over the biscuit base. Refrigerate for a few minutes until set, then unmould. Top with extra fruit compote, fresh berries, or your favourite garnish.
