Creamy Lemon‑Blackberry Cubes 🍋
Ingredients:
1 ½ cups all‑purpose flour
½ cup granulated sugar
¼ tsp salt
½ cup (1 stick) unsalted butter, melted
2 large eggs
½ cup fresh lemon juice (≈2‑3 lemons)
2 Tbsp lemon zest
⅔ cup granulated sugar
¼ cup all‐purpose flour
1 cup fresh blackberries (plus a few extra for garnish)
¼ cup powdered sugar (for dusting)
Directions:
Preheat your oven to 350 °F. Line an 8×8‑inch baking dish with parchment paper leaving an overhang for easy removal.
In a medium bowl, whisk together 1½ cups flour, ½ cup sugar, and salt. Add melted butter and stir until just combined. Press this mixture evenly into the bottom of the prepared dish to form the crust.
Bake the crust for about 15–18 minutes, or until lightly golden. Remove from oven and set aside.
Meanwhile, in another bowl, whisk eggs, lemon juice, lemon zest, ⅔ cup sugar, and ¼ cup flour until smooth. Gently fold in the fresh blackberries.
Pour the lemon‐berry mixture over the warm crust and return to the oven. Bake for another ~20‑22 minutes, or until the filling is set (it may still slightly jiggle in the center).
Allow the dessert to cool to room temperature, then refrigerate for at least 2 hours (or until fully chilled) so the bars firm up nicely.
Use the parchment overhang to lift the slab out of the dish. On a cutting board, dust the top with powdered sugar and slice into 16 even squares (or “cubes”).
Garnish each cube with an extra blackberry, if desired. Serve chilled.
