Roasted Butternut Squash Pasta 🍝✨
Creamy, savory, and a little unexpected — this is comfort food that works any time of year.
Roasted butternut squash, sweet onion, garlic, tomatoes, thyme & rosemary until caramelized and golden. Blended into a silky sauce with milk, pecorino romano, Boursin, and fresh lemon for brightness.
Tossed with Italian sausage, fusilli, pasta water and finished with peppery arugula, fresh parsley, Romano and crispy bacon (obviously.)
Ingredients:
• 1 butternut squash, peeled + cubed
• 1 yellow onion (wedges)
• 3–4 cloves garlic (whole, skin on)
• 2–3 tomatoes (halved)
• Fresh thyme + rosemary
• 1 lb Italian sausage
• 16 oz fusilli
• 1 cup reserved pasta water
• ½ cup milk (adjust as needed)
• ½–1 cup pecorino romano
• ½–1 package Boursin (to taste)
• Zest + juice of 1 lemon
• Handful of arugula
• Olive oil, salt, pepper
• Fresh parsley
• Bacon + bacon grease
