Banana Pudding Cookies 🍪🍌
Ingredients:
For the Cookies:
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon banana extract (optional for extra banana flavor)
1/2 cup instant banana pudding mix (dry, not prepared)
1/2 cup chopped vanilla wafers (optional)
1/2 cup white chocolate chips (optional)
1/4 cup mini marshmallows (optional, for extra gooey texture)
For the Glaze:
1/2 cup powdered sugar
2 tablespoons milk
1/4 teaspoon vanilla extract
Instructions:
Step 1: Prepare the Cookie Dough
Preheat the oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, salt, and instant banana pudding mix.
Cream the butter and sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
Add the wet ingredients: Beat in the egg, vanilla extract, and banana extract (if using) until well combined.
Combine with dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
Step 2: Add the Mix-ins
Stir in the add-ins: Gently fold in the chopped vanilla wafers, white chocolate chips, and mini marshmallows (if using) for extra texture and flavor. These are optional, but they add a fun twist to the cookies.
Step 3: Shape and Bake the Cookies
Scoop the dough: Use a cookie scoop or tablespoon to portion out the dough and roll it into balls. Place the dough balls about 2 inches apart on the prepared baking sheets.
Flatten the dough: Gently press the dough balls down slightly to flatten them, as these cookies won't spread much on their own.
Bake: Bake the cookies for 10-12 minutes or until the edges are golden brown but the centers are still soft. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Step 4: Prepare the Glaze
Make the glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth and thin enough to drizzle.
Drizzle the glaze: Once the cookies have cooled, drizzle the glaze over the tops of each cookie for an extra sweet and creamy finish.
Step 5: Serve and Enjoy
Serve: Allow the glaze to set for a few minutes before serving. Enjoy the soft, chewy banana-flavored cookies with the added crunch of vanilla wafers and the sweetness of the glaze!
