5-MINUTE NO BAKE CHEESECAKE! 🍰
I’ve been making this on repeat lately😍
Recipe serves 2:
Per serving: 230 Cal | 15.5g P . 22g C . 9gF
CREAM BASE:
• 1 cup cottage cheese (~200g) “I used Daisy | Sour Cream, Cottage Cheese, & Dips 2%”
• 4 tbsp low fat cream cheese (~62g)
• 1 tsp vanilla extract
• 2 tbsp zero cal sweetener or honey
• Juice + zest of 1 large lemon (use half a lemon if you like it less lemony)
Blend together until smooth and creamy.
Use any zero sugar biscuits you like (I used Murray - 130 cal for 8 biscuits, which serves 2). Crush the biscuits with any heavy gadget.
In a small cup or container layer the cream cheese base + crushed biscuits + optional any fruit you like (blueberries, strawberries, cherries, mango…).
Optional: refrigerate for 30 minutes but I almost never wait! 😂

HEALTHY 3-MIN MICROWAVE BOUNTY CAKE 😍🍫🥥
Per serving (÷3): 274 Cal | 12g P . 20g C . 17g F
In an oven safe dish mix together:
• 1 banana
• 1 egg
• 1 tsp vanilla
• 1.5 tbsp cocoa powder
• 1/2 tsp baking powder
• 2 tsp zero calorie sweetener or honey
Microwave for 3 minutes, or bake in a preheated oven at 355°F (180°C) for 10 minutes. Let it cool completely.
In a separate bowl combine:
• 230g regular or greek yogurt (1 cup)- I used zero fat greek
• 40g unsweetened shredded coconut (1.4 oz) + more for garnish
• 1 tsp vanilla
• 1 tbsp zero calorie sweetener
Spread the creamy coconut layer over the cooled cake base.
Drizzle with 35g melted chocolate (I used 90% dark + 1/2 tsp coconut oil, melted for 30 seconds in the microwave).
Garnish with more coconut flakes and freeze for 30 minutes or refrigerate for 1-2 hours until perfectly chilled. 🥥

ONE OF THE MOST LOVED APPETIZERS BY EGYPTIANS! Egyptian Moussaka 🍆🥔
It’s originally made with just eggplant but many Egyptians like to add potatoes too.
The whole recipe serves 3-4 persons

The whole recipe with 1 lb extra lean ground beef: 1172 Calories. 114g P. 96g C. 39g F
INGREDIENTS:
•1 large eggplant, cut into cubes
•1 large potato, cut into small even cubes
•1 green bell pepper
•1-2 jalapeños to taste
•1 tsp salt, cumin and optional chili powder
•2 tbsp minced garlic
•2 tbsp tomato paste
•1 lb fresh tomato juice or 1 can crushed tomatoes
•Optional: cooked low fat ground beef for more protein
•3 tsp olive oil
HOW TO:
In a hot pan add 1 tsp olive oil and cook your eggplant cubes on high for 3-5 minutes, then lower the heat and cover for 10 more minutes, stirring frequently. It should be perfectly cooked after about 15 minutes. I don’t like to airfry the eggplants, the recipe mentioned previously is the best way to cook eggplants with minimal oil in my opinion.
Wash the potatoes until the water runs clear then pat them dry with a paper towel. Air fry with a spray of olive oil for 10 minutes at 400°F (200°C), then 5-7 more minutes at 380°F (190°C). The oven works too but takes a little longer.
In the same pan where you cooked the eggplant, add 1 tsp olive oil and 2 tbsp minced garlic and stir for a minute until fragrant. Add your pre-cut peppers and tomato paste and stir for another minute. Add the tomato juice and spices, then lower the heat and simmer for 5 minutes. Add 1/4 cup of water if it’s too thick. Finally add the cooked eggplant and potatoes and mix well. Taste and adjust the seasonings to your liking. Add cooked ground beef if you want it as a complete meal rather than just an appetizer.
Enjoy with Egyptian baladi bread (you can find it exclusively at Trader Joe’s if you’re in the US), or skip the bread for a low carb option!

ONE OF MY FAVORITE BOWLS EVER 🍣
Salmon, Mango Salsa & Coconut Rice Bowl
I’ve been craving this bowl every week ever since I saw Emmanuel Duverneau ‘s video , and I’ve made it 5 times already! 🔥
🍚🥥 COCONUT RICE:
(For fluffy rice, use 1.5 cups liquid per 1 cup rice)
• 2 cups jasmine rice (or basmati) washed and rinsed
• 2 cups unsweetened coconut milk
• 1 cup water
• 1/2 tsp salt
• 1 tsp butter (optional)
Rinse the rice twice then drain. In a saucepan over medium high heat add a spray of olive oil, rice, coconut milk, water and salt. Stir and cover for 2 minutes until most of the liquid is absorbed, then simmer on low for about 20 minutes until perfectly cooked. Add the salt and butter at the end to melt in the hot rice
🍣 SALMON:
• Whole side of salmon, skin removed and cut into even cubes
• 1 tbsp olive oil
• 1/2 tsp salt and pepper
• 1 tbsp smoked paprika
• 1 tsp chili powder (optional)
• 1 tbsp garlic powder & onion powder
Coat the salmon with olive oil and seasonings. Place on a parchment lined sheet pan and bake at 400°F (200°C) for 10-13 minutes depending on cube thickness, or air fry at 200°C for 10 minutes. DON’T OVERCOOK YOUR SALMON!
🥭🥕 MANGO SLAW:
• 2 mangos, cut into small cubes
• 1.5 cups red cabbage
• 1.5 cups green cabbage
• 1 large carrot, julienned
• 1 medium red onion, thinly sliced
• Salt and pepper to taste
• 1/2 cup chopped cilantro
• Juice of 1 lime or lemon
• 1 tbsp honey or zero cal sweetener
Combine all ingredients in a bowl and store in the fridge until ready to use.
🌶️ SPICY MAYO SAUCE:
• Light mayo (I replaced it with 1 cup zero fat greek yogurt)
• 2-3 tbsp sriracha/hot sauce
• 1 tbsp honey or zero cal sweetener
Add more sriracha for a spicier sauce or more sweetener for a sweeter one. Top your bowl with chopped cilantro and enjoy! 🍣

CHICKPEA CHICKEN FETA SALAD 🥗
Perfect for summer and meal prep! 👌🏻
Recipe makes 4 servings
Per serving: 576 Cal | 73g P . 41g C . 17g F 💪🏻
INGREDIENTS:
• 1 kg (~2 lbs) grilled chicken breasts/tenderloins or rotisserie
• 1 cup cooked quinoa or white/basmati rice
• 1 can drained chickpeas (~250g)
• 1 small red onion, thinly sliced
• 1 large tomato diced (or 20 cherry/grape tomatoes)
• 1 large cucumber (or 3 small) diced or thinly sliced
• 60g low fat feta cheese
• Spinach and arugula (optional)
• Lettuce if you like
• Juice of 1 large lemon
• 1/4 cup balsamic vinegar (OR apple cider vinegar+ 1 tsp sweetener OR pomegranate molasses)
• 1/2 tsp salt and pepper
• 1 cup yogurt mint sauce
🥛 YOGURT SAUCE:
Mix 1 cup low fat yogurt (regular or greek ~180g) + 1 tbsp olive oil + 1 tsp minced garlic + 1/4 tsp salt and pepper + 1 tbsp dried mint (or fresh dill if you like the taste).
🌾 QUINOA:
Wash 1 cup dried quinoa well until the water runs clear. On medium heat add a spray of olive oil to a pan, then add your washed and drained quinoa. Stir for a minute, then for every cup of quinoa add 1¾ cups of water and a pinch of salt. Cover and simmer for 25-30 minutes. Once done add a teaspoon of minced garlic and mix. Taste and adjust salt to your liking.
🍗 CHICKEN:
For every 1 kg of tenderloins add 1 tsp each of smoked paprika, onion powder, garlic powder, black pepper and 1/2 tsp salt. Grill on high heat for 2 minutes on each side with a spray or brush of oil. Once it has the grill marks, lower the heat, add a splash of water, cover and cook for 10 more minutes flipping halfway through or until the chicken is fully cooked.

VIRAL CRUSTED JAMMY EGGS! 🥚
My new favorite way to eat hard boiled eggs, they’re just sooooo good!
I’ve seen many creators make these eggs but Jacqueline Vignona | Easy & Delicious Recipes is the one who inspired me to try them! 😍
INGREDIENTS:
• Eggs boiled for 7-9 minutes
• 1 tbsp low fat natural mozzarella or grated parmesan per egg half
On medium heat place the cheese in a non stick pan and add the egg halves on top. Add a splash of water and cover for 1 minute so the cheese melts and sticks to the egg.
FOR THE COTTAGE CHEESE LAYER:
Mix together cottage cheese + green onion + chili flakes (optional) + a pinch of salt if your cottage cheese is unsalted.

SUPER EASY 20-MIN GARLIC BUTTER SHRIMP 🍤
Recipe makes 2 servings
Per serving: 561 Cal | 98g P . 6.5g C . 19g F (shrimp & sauce, without rice)

INGREDIENTS:
• 2 lbs (~1kg) large shrimp, peeled and deveined
• 1/2 tsp salt and pepper
• 1 tsp paprika, garlic powder, onion powder and cayenne pepper/chili powder
• Quick olive oil spray
Season the shrimp and sear on high heat for 3 minutes on each side, then set aside.
🧄🧈 GARLIC BUTTER SAUCE:
In the same pan add:
• 2 tbsp butter
• 2 tbsp minced garlic
• 1 jalapeño, sliced
• 1 tbsp honey or zero cal sweetener
• Juice of 1 large lemon or lime (I used lemon)
• 2 tbsp fresh cilantro (I didn’t have any that day so I skipped it)
• Salt to taste (~1/2 tsp)
Cook for 1-2 minutes then add the cooked shrimp back in. Give it a quick stir and serve with any rice of choice! 😍

We ate these Air Fried Chicken Breasts 3 days in a row😍
The whole meal comes together in 20 minutes. low carb and packed with protein!

Chicken recipe inspired by 👏🏻
FOR THE WRAP:
Blend together really well: 3 eggs + 1 cup cottage cheese (I used 2%) + 3 tbsp psyllium husk + salt and pepper to taste.
Spread evenly on parchment paper lightly brushed with olive oil and bake for 15 minutes at 355°F (180°C), then broil on low for 2 minutes.
Meanwhile, we’ll prepare the chicken.
🍗 INGREDIENTS:
For every 1 lb (~0.5kg) thinly sliced chicken breasts (or tenderloins), mix together these spices:
• 1 tsp paprika (I use smoked paprika)
• 1/2 tsp garlic powder, onion powder, salt, pepper and thyme
• 1 tsp zero cal sweetener (omit if you don’t like it sweet)
• 1 tsp cornstarch (cornstarch is naturally gluten free and won’t affect low carb diets because we’re adding little amount)
• 1 tbsp olive oil or avocado oil to spray/brush for air frying
📝 INSTRUCTIONS:
Cut the chicken into thin pieces: cut each breast into 3 thin flat pieces, or cut lengthwise into 2 flat pieces then slice into tenderloins. Pat the chicken dry with paper towels to remove any excess water or moisture.
Toss the spices together until well mixed, then sprinkle generously over the chicken in a bowl. Place the chicken on the air fryer basket in an even layer, leaving a little space for air to circulate. Spray or brush with oil and air fry at 400°F (200°C) for 10-12 minutes, flip and cook for 3 more minutes. For thicker or larger pieces, add 3 more minutes. Internal temperature should reach 170°F.
It should be crispy on the outside, full of flavor and juicy on the inside! Let it rest for a moment then slice into it, add it to a wrap with your favorite sauce, tomatoes and lettuce, or serve with a side of rice and enjoy

Gluten free Low Cal quinoa tortilla 🌯
This quantity yields 4 medium tortillas
Per tortilla ~80 Cals
Ingredients:
- 1/2 cup quinoa any kind
- 1/2 cup of water
The bread will have the taste of the spices you add! If you want it sweet add a tsp of sugar and 1/2 tsp cinnamon
- 1/2 tsp minced garlic (1-2 garlic cloves)
- 1/4 tsp salt and cumin to taste
Chili pepper 🌶️ or chili powder
How to?
1-Wash the quinoa really well under running water
2-soak for 1-3 hours in water
3-drain water
4- blend the quinoa, water and spices in a blender
5- in a NON STICK PAN spray or brush with a little olive oil
6- pour an adequate amount of the mixture and spread quickly with a spoon
7- wait for 2-3 mins then flip and cook on the other side for 2 more mins
Fill it with whatever you like (grilled chicken/ turkey/ roastbeef/ eggs…) and enjoy!
