Breakfast burrito… but no tortilla 👀 I personally love a good breakfast burrito, especially with a thick slice of avocado… so I was inspired to make a potato roll version instead of using a flour tortilla. It’s honestly so quick, works surprisingly well, and feels a little lighter too. No flour tortilla, no deep frying — just crispy potato, eggs, cheese, and your favorite fillings rolled up together. You can totally switch it up with chorizo, ham, different cheeses, whatever you have in the fridge. I had mine with bacon, avocado, cheddar, and a generous drizzle of Mexican-style hot sauce and it was so good. I’ve been making this on repeat for our breakfasts lately 🤍 Save this one for when you’re craving a breakfast burrito but want something a little different. 🥔Crispy Potato Egg Cheese Roll (Breakfast Burrito Inspired) Ingredients 1 russet potato 2 eggs Salt Oil Cooked bacon Avocado Cheddar cheese Hot sauce (optional) Instructions 1. Prep pan Lightly oil a pan over medium heat. 2. Potato layer Peel the potato directly into the pan using a peeler. Spread the thin slices evenly into a flat layer. 3. Add egg Crack 2 eggs over the potatoes and spread evenly. Lightly salt. Cover with a lid and cook 2-3 minutes until eggs are mostly set and the potato bottom is lightly browned. 4. Fill & roll Add bacon, avocado, and cheddar on one side. Carefully roll into a tight log. 5. Finish Cook another 2–3 minutes until crispy and cheese is melted. Serve hot with your favorite sauce (hot sauce recommended) 🔥
