Cherry Pie Recipe
Ingredients:
For the Pie Crust:
2 ½ cups all-purpose flour
1 teaspoon salt
1 tablespoon sugar
1 cup unsalted butter, chilled and cubed
6-8 tablespoons ice water
For the Cherry Filling:
4 cups fresh or frozen cherries, pitted
1 cup granulated sugar
1/4 cup cornstarch
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/4 teaspoon almond extract (optional)
1 tablespoon butter, to dot
Instructions:
Make the Pie Crust:
In a large bowl, combine the flour, salt, and sugar. Add the cubed butter and mix until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.
Prepare the Cherry Filling:
In a medium bowl, combine the cherries, sugar, cornstarch, vanilla extract, lemon juice, and almond extract (if using). Mix well and let sit for about 10-15 minutes.
Preheat the Oven:
Preheat your oven to 425°F (220°C).
Roll Out the Dough:
On a floured surface, roll out one disk of dough to fit a 9-inch pie pan. Place the rolled dough into the pie pan.
Add the Filling:
Pour the cherry filling into the prepared pie crust. Dot with small pieces of butter. Roll out the second disk of dough and place it over the filling. Crimp the edges to seal and cut slits in the top to allow steam to escape.
Bake the Pie:
Bake in the preheated oven for 20 minutes. Reduce the temperature to 350°F (175°C) and bake for an additional 25-30 minutes, or until the crust is golden brown and the filling is bubbly.
Cool and Serve:
Allow the pie to cool for at least 2 hours before slicing. Serve warm or at room temperature, preferably with a scoop of vanilla ice cream!
