🌱 Regrowing my spring onions, and a little maintenance tip!
Look at all this new growth! πŸ’š
If you're regrowing spring onions in water and notice the roots becoming a little slimy or gooey, don't panic. I simply take them out, gently rinse the roots under cool water, give the jar a good clean and replace with fresh water.
I change the water regularly to keep everything fresh.
These have already given me some fantastic new growth, but they won't stay in water forever. Next stop is soil, where they can continue growing and establish stronger roots. 🌱
Such an easy way to get a little more from something that might otherwise have gone straight into the food waste!

Finally getting back to my food page! ❀️

Swim lessons have been incredibly busy lately, so I haven’t had nearly as much time to share what’s been happening in my kitchen.

Today’s bake, homemade sourdough rye.
I decided to split the dough and make two smaller loaves. This one was baked today, while the second is still in the fridge cold fermenting, ready to bake tomorrow.

Really pleased with how this one turned out , lovely crust and a soft, beautifully textured crumb πŸ˜‹

Looking forward to getting back to sharing more of my Food with a Purpose recipes and ideas again soon! ❀️

πŸ₯­ Homemade Mango Ice Pops! β˜€οΈ

One of the things I love most about living here is the kindness of our neighbours. Right now, many are leaving bags of freshly picked mangoes outside their homes for anyone to enjoy πŸ’›

Our own mango tree only has three mangoes this year, and they're not ripe yet, so we were very grateful for these delicious gifts!

These ice pops couldn't be simpler: πŸ₯­ Fresh mangoes πŸ’§ A splash of water πŸ‹ and lemon.
Blended until smooth and frozen, nothing else added! I made my last batch with Greek yogurt, but this time I kept them completely dairy free. They're naturally sweet, refreshing, and perfect for a hot Florida day.

Who else loves making the most of seasonal fruit? 🌞πŸ₯­

Things are a little quieter here at the moment as my swim lessons are now in full swing, so most of my time is being spent in the pool teaching.

πŸ₯— Food with a Purpose is still very much part of my journey! My new swim website is coming soon, and it will include a dedicated Nutrition & Recipes section, where I'll be sharing simple, nutritious recipes to help fuel healthy, active lifestyles.
