"🥕🥒 Zucchini & Carrot Savory Slice
📝 Ingredients
2 medium zucchinis (grated)
2 medium carrots (grated)
1 small onion (finely chopped)
2–3 eggs
1 cup shredded cheese (cheddar or mozzarella)
1/2 cup all-purpose flour (or whole wheat flour)
1/4 cup milk
2 tbsp olive oil
1 tsp baking powder
Salt and black pepper (to taste)
1/2 tsp dried oregano or mixed herbs (optional)

👩‍🍳 Instructions
Prep the veggies
Grate zucchini and carrot. Squeeze out excess moisture from zucchini using a clean cloth (important for texture!).
Mix wet ingredients
In a bowl, whisk eggs, milk, and olive oil.
Combine everything
Add grated veggies, onion, cheese, flour, baking powder, and seasonings. Mix until well combined.
Bake
Preheat oven to 180°C (350°F)

"🧀🥔🌿 Cheesy Potato Spinach Quiche (Crustless)
🛒 Ingredients
2 cups potatoes (peeled & thinly sliced or diced)
2 cups fresh spinach (chopped)
1 cup shredded cheese (cheddar, mozzarella, or mix)
5 large eggs
½ cup milk (or cream for richer texture)
1 small onion (finely chopped)
2 cloves garlic (minced)
1 tbsp olive oil
½ tsp salt
½ tsp black pepper
½ tsp paprika (optional)
🍳 Instructions
Cook the potatoes
Boil or sauté potatoes until just tender (not mushy). Drain and set aside.
Sauté aromatics
Heat olive oil in a pan. Cook onion until soft, then add garlic and spinach. Cook until spinach wilts and moisture evaporates.
Prepare egg mixture
In a bowl, whisk eggs, milk, salt, pepper, and paprika.

"Pimento Cheese Grits Casserole for Easter!
2 Cups Water
2 Cups Milk
1 Cup Quick Grits
1/2 teaspoon Salt
2 eggs, beaten
2 Cups Palmetto Cheese (BOGO at Publix until 4/4/26)
1 Cup Parmesan Cheese
In a pot, combine water and milk and bring to a boil. Stir in the Quick Grits and cook until tender.
Remove from the heat and stir in beaten eggs and salt. Add Palmetto Cheese and Parmesan Cheese, stir until combined.
Spray a casserole dish with pan spray and pour your grits mixture into the dish. Bake at 350F for 35 minutes and serve."

"One-Pan Ground Beef Orzo Bake
Ingredients:
- 1 lb ground beef
- 1 cup orzo pasta
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish"

"Banana Cheesecake Delight! 🍌
Crust
11oz box vanilla wafers
¼ cup brown sugar
1 ½ sticks salted butter
Pudding
2 3.4 oz boxes vanilla pudding
3 cups cold milk
½ tsp or more of rum extract (optional)
Garnish
Nilla wafers
Bananas
Caramel
Nuts
1 container no bake cheesecake
4 fresh bananas
8oz cool whip
Prepare the crust and press it into a 13x9 dish. Chill in the refrigerator for 10 minutes. Next, add the no-bake cheesecake filling. Slice bananas and place them on top of the cheesecake filling. Prepare the pudding - it should have a thick consistency. Spread the pudding over the bananas. Finish by adding whipped topping and garnish as desired."

"Cheesy beef pockets
Ingredients
1 lb of ground beef, 80% lean and 20% fat.
1 onion, finely diced
1 tbsp fresh garlic, minced
1 cup bell pepper, chopped
1-2 Serrano pepper, chopped ( optional )
3 tbsp tomato paste
Salt to taste
1 tsp garlic powder
1 tsp smoked paprika powder
1/2 tsp chili powder
1 tsp red chili flakes
1 tsp black pepper
1 tsp cumin powder
3/4 cup water
2 tbsp oil
To assemble:
4 large tortillas, cut into half
3 tbsp Butter/garlic butter
1 cup mozzarella cheese
1 cup cheddar cheese
Method:
In a pan, heat oil on medium heat. Once the oil is hot, add onions and garlic. Sauté them for 1 to 2 minutes until the onions become translucent. Then, add the minced beef and cook it for 3 to 4 minutes until it changes color. Season the mixture with salt, pepper, paprika powder, garlic powder, red chili powder, cumin powder, and red chili flakes. Mix well to combine all the ingredients. Add tomato paste and sauté for 2-3 min. Finally, add water to the pan and cook on medium heat for 8 to 10 minutes, or until the beef is cooked through and the water is almost evaporated.
Add the bell peppers and Serrano peppers to the pan and sauté them for 2 to 3 minutes. Then, turn off the heat and set aside.
Preheat oven to 400°F.
Take the tortilla wraps and cut them in half. Place shredded mozzarella cheese in the center of each half, followed by 2–3 tablespoons of the cooked beef filling. Fold and seal the tortilla to form a triangle, then set it aside. Repeat with the remaining tortillas until all are filled with cheese and beef.
Grease a circular baking dish with garlic butter. Arrange the prepared wraps in the dish. Brush the tops with more butter, then sprinkle with mozzarella and cheddar cheese. Bake for 15–20 minutes, or until the cheese is fully melted and bubbly.

"Crinkle Top Fudgy Brownies
Ingredients:
1 cup (225g) unsalted butter
1/2 cup (60g) natural cocoa powder
1 tbsp (15g) vanilla bean paste or vanilla extract
1/2 cup (115g) light brown sugar
1 3/4 cups (350) powdered sugar
1 cup (120g) semi-sweet chocolate chips
1 tsp espresso powder
1/4 cup (60g) semi-sweet chocolate, chopped
3 large eggs, at room temperature
1/2 cup (65g) all-purpose flour
1/2 tsp of salt
3 tablespoons (45ml) olive oil
Method:
Preheat the oven to 350°F (175°C). Grease and line an 8x8-inch (20x20cm) pan with parchment paper on all sides. Set aside.
Place the butter in a saucepan and set over medium-low heat. Once the butter starts to foam, stir and scrape the butter from the bottom and sides of the pan every 10 seconds. After 6-8 minutes, the milk solids will sink to the bottom of the pan and start turning brown. As soon as the butter smells nutty and toasted, and turns a deep golden brown, it’s ready! Immediately transfer it to a heatproof bowl to cool. Add the cocoa powder, oil, espresso powder, vanilla, and chopped chocolate to the cooled browned butter. Mix until the chocolate has melted and the cocoa powder is completely dissolved.
In a separate bowl, crack the eggs and add the light brown sugar. Whisk for 5-6 minutes or until the sugar is completely dissolved in the eggs. Note: It’s crucial to dissolve the sugar in the eggs for a crackly top.
5. Once the sugar is completely dissolved, add the powdered sugar and mix for another 1-2 minutes until completely combined. Add the browned butter mixture (once cooled) to the egg mixture. Toss in the flour and chocolate chips. Mix until well combined.
Transfer the batter to the prepared 8x8-inch baking dish and bake for 30-35 minutes. When done, the tops will be shiny, and if you test with a toothpick, some crumbs will cling to it. Let the brownies cool in the pan for 1-2 hours before cutting. When it’s time to cut, use a very sharp knife, run hot water onto the knife to warm it up, and use a wet paper towel to clean off the knife between cuts.

"SAVE my LAZY BAKED CHICKEN “MILANESE” for easy and light dinner! Full recipe below.
Makes 1, Serves 2
Ground Chicken Patty Ingredients
1 lb ground chicken 92/8
½ tsp salt
½ tsp onion
½ tsp pepper
3 tbsp chopped parsley
2 tbsp grated parm (optional)
½ egg
Breadcrumbs Ingredients
½ cup panko
¼ tsp salt
½ tsp garlic powder
3 tbsp grated parm
2 tbsp dry or fresh parsley
2 tbsp olive oil
Salad Ingredients
2 cups arugula
¾ cups cherry tomatoes halved
Shaved parmigiano reggiano
Balsamic vinaigrette (see recipe below)
Preheat oven to 375F
-Add all the ground chicken ingredients to a bowl and mix well.
-Add all the breadcrumbs to a bowl and mix well.
-Line a baking dish with parchment paper.
-Place the chicken mixture onto a parchment paper and spread into a 10 inch round flat circular patty.
-Top the chicken patty with breadcrumb mixture and bake on top 3rd of the oven for 15 to 20 minutes or until the chicken is cooked through and the breadcrumbs are a deep golden brown.
-Transfer to a serving plate and top with salad ingredients.
Balsamic Vinaigrette
⅓ cup olive oil
2 tbsp balsamic vinegar
3 tbsp orange juice
1 tbsp honey
½ tsp Dijon Mustard
½ tsp salt
½ shallot

♨️SOSLU MEATBALL
Ingredients;
300 grams of minced meat
1 piece onion
1 egg
4 tablespoons of galeta flour
1 clove of garlic
Parsley
Pepper powder, black pepper, cumin, salt.
For the sauce;
1 tablespoon of tomato sauce
1 cup of water
3 tablespoons of liquid oil.
for the puree ;
5-6 potatoes
1 tablespoon of butter
1 cup of milk
Salt
The making of:
Let's take the meatball ingredients in a bowl and knead it. Let's rest for half an hour. In the meantime, let's clean the potatoes and leave them to mash.
Let's shape the meatballs and fry them in low fat.
Let's take the sauce ingredients in a small pan and mix. Pour it over the fried meatballs and close the lid.
Let's add butter to the boiled potatoes and mash them.
Let's add milk and salt until we get puree kuvam.
When the meatball becomes intense, let's serve it with rice and puree.

"✨Sheet Pan Strawberry Shortcake✨
1. Take a box of angel food cake mix and make as the box directions say. Mine says just add water. Mix well then add this to a 12x17 sheet pan. (I added parchment paper to my sheet pan)
2. Bake this at 350 degrees for 20-25 minutes until the top becomes a little brown. Let cake cool. I sat mine in the fridge to cool.
3. Once cooled I lifted the cake out my the parchment paper and flipped it over into the sheet pan. Then peeled off the paper. Now add a layer of cool whip to the top and chopped strawberries.
4. Enjoy!!!"

"🍤🥑 Mexican Shrimp Cocktail (Cóctel de Camarones)
📝 Ingredients (Serves 4)
🍤 Shrimp Cocktail
• 1 lb cooked shrimp, peeled and chopped
• 1 cup tomato juice or Clamato
• ½ cup ketchup
• 1 avocado, diced
• 1 tomato, diced
• ½ cucumber, diced
• ¼ cup red onion, finely chopped
• ¼ cup fresh cilantro, chopped
• 2 tbsp lime juice
• 1 jalapeño, finely chopped (optional for heat)
• Salt and black pepper, to taste
🍽 Instructions
1️⃣ Prepare the Shrimp Base
Place the cooked shrimp in a large mixing bowl. Add the diced tomato, cucumber, red onion, cilantro, and jalapeño for a fresh and colorful mixture.
2️⃣ Make the Cocktail Sauce
In a separate bowl combine the tomato juice (or Clamato), ketchup, and lime juice. Stir well until the sauce is smooth and slightly tangy.
3️⃣ Combine Everything
Pour the sauce over the shrimp mixture and gently stir until everything is evenly coated.
4️⃣ Add the Avocado
Carefully fold in the diced avocado so the pieces stay intact and creamy.
5️⃣ Chill
Cover and refrigerate the shrimp cocktail for 20–30 minutes to allow the flavors to blend together.
6️⃣ Serve
Serve cold in cups or bowls and garnish with extra avocado, cilantro, and lime wedges.
