Hobbit food

1 rope polish sausage sliced bite size ($5)
1 onion sliced (food bank)
1 clove garlic minced ($1 for whole bulb)
1 zuchini quartered and sliced (food bank)
1 8oz box of sliced mushrooms ($3) or 2 small cans of mushroom peices drained (food bank)
2 T oil (food bank)
1/4 c beer ($2)
1/2 t paprika (food bank)
1/4 t pepper (food bank)
Dash salt

Heat oil in a big pot on medium high.
Add onions and stir till soft. Add garlic and stir for 2 minutes.
Add sliced sausage and stir for 3 minutes.
Add beer to deglaze pan. Then add zuchini and mushrooms. Add paprika, pepper and salt.
Cook uncovered until vegetables are fully cooked and soft.

French onion soup

5 medium onions halved and sliced thin (food bank)
1/2 stick of butter ($4 for 1lb)
3 cloves garlic minced ($1 for whole bulb)
1 c red wine ($4) or red cooking wine ($5)
64oz of beef stock ($6)

2 t rubbed sage (food bank)
2 t dried thyme (food bank)
1 t dried rosemary (food bank)
Or
1 T poultry seasoning (food bank)
One piece of Swiss cheese per bowl ($2 for whole package)
One peice of toast for each bowl of soup (food bank)

Melt butter in a big heavy pot on medium high heat.
Add onions and cook slowly stirring frequently until completely soft and clear. There should be a little browning on the bottom of the pot when cooked completely.
Add garlic and cook for 3 minutes stirring constantly.
Add spices and stir for 1 minute.
Deglaze pan with red wine.
Add beef stock and cook on low for 1 hour stirring every 15 minutes.
Place toast in a deep bowl and place cheese on top of toast. Ladle soup on top.

Ahi tuna poke with rice

2 small Ahi tuna steaks cut bite size ($8)
1 bunch green onions chopped ($2)
1 small can mandarin oranges in juice (food bank)**oranges in syrup will not work**

Marinade
1/4 cup soy sauce ($2)
1 T mandarin orange can juice only (food bank)
2 cloves garlic minced ($1 for whole bulb)
1 t ginger paste ($3) or 1/2 t ginger powder (food bank)
1 T rice vinegar (food bank)
1 t chili flakes (food bank)
1 T sesame oil (optional because its $12)

White rice
1 cup of white rice
2 cups of water

Put cut up tuna and put in a glass or plastic bowl (no metal please).
Strain can of oranges reserving 1 T of the juice. Set oranges aside.
Whisk marinade ingredients together and add to tuna. Add green onions reserving a pinch or two for garnish. Toss well.
Cover and let sit in the fridge for at least 2 hours tossing every half hour.
Next boil 2 cups of water. Add rice and stir. Reduce heat to medium low and cover. Cook for 20 mins and remove from heat. Let it cool covered.
Serve the marinated tuna over cooled rice and top with the last of the green onion and mandarin oranges.

Teriyaki roasted squashes

1 Zuchini sliced 1/4 inch slices (food bank)
1 Yellow squash sliced 1/4 inch slices (food bank)
1/2 onion sliced thin (food bank)
1/2 cup Soyvay brand Teriyaki sauce($4.50)
Oil or pan spray

Heat oven to 350 degrees
Oil a rimmed sheet pan. If you dont have pan spray put 1 T of vegetable oil on the pan and use a paper towel to evenly coat surface
On the rimmed sheet pan shingle sliced squashes. Top with sliced onion. Pour teriyaki sauce over slices. Bake for 35 mins or until squashes are soft.
Note! This will be runny. If you desire a stickier sauce use Kikkoman baste and glaze teriyaki sauce ($5) but watch it! It burns easily.

Pork chops in mushroom sauce with noodles
Better known as gobbledygoop

4 thin pork chops bone in or boneless (food bank)
2 cans mushroom soup. Cream of mushroom (food bank) or Campbell's golden mushroom ($6)
1 soup can of liquid. Milk (food bank) if using cream of mushroom, chicken broth ($2) or water
1/4 cup white wine($4) or cooking white or marsala wine ($5)
1 8oz package of mushrooms sliced ($3)
1/2 onion diced (food bank)
1 clove garlic minced ($1 for whole bulb)
2 T vegetable oil (food bank) or butter ($4) Butter tastes better
1 package egg noodles (food bank)

Heat oil or butter in a deep pan on medium high heat. Brown both sides of the pork chops and remove to a plate. Add onions and stir around till soft. Add garlic and stir for 30 seconds, being carefull not to burn. Add mushrooms and cook till softened. Add the wine and deglaze the pan scraping up and browned bits. Add soup and 1 soup can of liquid. Heat mixture until just bubbling and reduce heat to medium low. Return browned pork chops to pan and cook 30 mins more.
Prepare egg noodles by package directions.
Serve chops and sauce over noodles.

Seriously easy meatballs and sauce

Sauce
1 small can tomato paste (food bank)
2 cans diced tomatoes (food bank)
1/2 diced onion (food bank)
2 cloves garlic minced ($1 for whole bulb)
1 T itallian seasoning ($3)
2 T olive oil ($5) but any vegetable oil (food bank)will do
1/2 cup red wine ($4) or use cooking wine ($5)

In a big pot heat oil on medium high. Add onions and stir until they are soft. Add garlic and stir for 30 seconds (don't burn it!). Add tomato paste and stir till hot. Deglaze the pot with the red wine scraping bottom of pot. Add tomatoes and seasoning and reduce head to medium low so it just simmers. Now make your meatballs.

Meatballs
1lb ground meat (food bank)
1/2 cup unseasoned bread crumbs or panko ($3 or make your own out of old bread from the (food bank)
1/2 cup shredded mozzarella cheese ($2)
1 egg (food bank)
1 t garlic powder ($2)
1 t onion powder ($2)
1 T itallian seasoning ($3)
Salt and pepper

Put all ingredients in a bowl and using your hands mix together well. Make about a golf ball sized ball and put directly into hot sauce. Repeat for the rest of the meat mixture.

Cover and cook on medium low for at least 45 mins remembering to stir carefully about every 15 mins. Serve with your favorite pasta (food bank)

Crockpot beef osso bucco with cheesy grits

4 small beef shank slices (food bank)
2 T olive oil ($5) or really any oil will do. Vegetable oil (food bank)
1 can diced tomatoes, undrained (food bank)
2 diced carrots (food bank)
2 diced celery ribs (food bank)
1/2 diced onion (food bank)
2 cloves garlic minced ($1 for whole bulb)
1 T itallian seasoning ($2)
Salt and pepper

Sauce
1/2 cup red wine ($5 for a small box of real wine or you can use cooking wine ($5) but remember that has salt!)
1 cup beef stock or broth ($2)
1 small can tomato paste (food bank)

In a small bowl whisk together sauce ingredients. Set aside.
In a skillet heat oil at medium high and brown beef on both sides. (If you skip this you will end up with beef soup.)
Place beef in crockpot and add vegetable ingredients and spices.
Pour sauce mix on top and cook on low for 8 hours.

Grits (food bank)

Prepare according to a 4 serving size package instructions. Mix in 1/2 cup cheese before serving. I use parmasan ($3) but really any cheese will do in a pinch.

Serve beef and sauce on top of grits

2 smoked ham hocks($5) or about 2lbs of leftover ham...(if you have a bone it tastes better!)
3 cans butter beans, drained ($4) or you can use any canned beans (food bank)
1 small onion diced (food bank)
2 cloves garlic minced ($1 for the whole bulb)
4 cups beef stock or broth ($4)
2 bay leaves ($3)
2 t ground or rubbed sage (food bank)
2 t dried thyme (food bank)
Pepper and salt. Be careful with the salt the ham is already salty!

Place hocks in 5qt crock pot.
Add all ingredients on top and cook on low for 8 hours.
When cooked remove bones and return any meat remaining on bones to pot.
Really good with dipping bread!

Crock Pot Vietnamese inspired chicken vegetable soup with rice noodles

8 chicken legs or thighs with the skin removed (food bank)
1/2 onion diced small (food bank)
2 carrots cubed (food bank)
1 Celery rib cubed (food bank)
1 small broccoli crown cut into bite size florets (food bank)
1/2 Zuchini cubed (food bank)
Optional 1 8 oz package of mushrooms quartered ($3)
4 cups chicken stock or broth ($4)
1/4 cup soy sauce ($2)
2 T hoisin sauce ($3)
1 T Crushed ginger (I use pre-made paste ($5) or you can use fresh for cheaper. Just peel and crush!)
2 Cloves garlic minced ($1 for the whole bulb)
Pepper
Optional heat...1 whole dried small chili pepper (food bank) or drizzle some Sriracha on top ($3)
1 package of rice noodles (food bank). You can also use spaghetti noodles (food bank)

Place skinned chicken in a 5qt crockpot.
Add all ingredients on top except for the noodles.
Cook on low for 8 hours
After cooking remove chicken and let cool. Then remove bones and chop or shred meat. Add back to pot.

When the soup is done make noodles according to package instructions separately.

Serve soup over prepared noodles

Cucumber salad with Honey Balsamic Ginger dressing.

1 Cucumber. English if you don't feel like peeling ($1.40) or peeled standard (food bank) sliced thin
1/2 onion (food bank) sliced thin

Dressing
Mix together in a small bowl

1/2 cup balsamic vinagar (food bank)
2 T sesame oil ($8) or olive oil ($5)
2 Cloves minced garlic ($1 for the whole bulb)
1 T Crushed ginger (I use a fresh ginger paste at ($5) but you can buy it whole for less. Peel it with a spoon and crush it to a paste)
2 T honey (food bank)

Toss Cukes and onion in dressing.
