Mo's Meals "Chef" prepared meals inspired by Cajun roots and Texas influences. I grew up in Louisiana, and have been living in Texas for the past 22 years.

I see that a cold front is coming in Tuesday and temperatures will be a high of 82 degrees and low in the 50s. That means soup time! Let me know by this Tuesday at 10am if you would like Italian Tortellini Soup this Wednesday.

Nate has been patiently waiting for me to have enough time to make homemade wonton soup for him. So, this week I will do just that and share with my friends. If you are interested, I will be making wonton wrappers from scratch and fill them with a "Beefy Chinese Dumpling" mixture, and cooking them in a spicy wonton soup.
You would get the wontons and soup separately. When you get home, you would heat up the soup and finish the cooking of the wontons as the soup boils.
You will be getting a meal made with lots of love for $10 a serving. Please comment below by Tuesday at 10am if you would like for me to take meal planning off your plate for Wednesday night.

This is an extra for this week. I am making a large batch of Spicy Sun-Dried Tomato Soup with Chards. My intention was to freeze some for nights I didn't feel like cooking. I dehydrated the tomatoes myself, so no added preservatives. What you see in the picture is what you will get in your soup. My preparedness is working in your favor too. If you would like some for dinner, lunch, or to freeze yourself let me know. I can get you some set aside by 8pm tonight.

I have been wanting to make mango salsa for a while now. So, this Wednesday I will be making crab cakes with mango salsa.
You will be taking home homemade crab cakes to cook in your own oven and top with homemade mango salsa. This salsa is delicious on it's own as a snack, with tortilla chips, or as a topping for crab cakes, fish, or chicken.
I also have cilantro butter left over from last week. If you would like a some butter to transform your chicken or steak, let me know.

Serving of Crab Cake and Mango Salsa $15

Who would like Cilantro Chicken with a side of fresh sliced cucumbers, tomatoes and avocado? This dish is a boneless chicken breast topped with a dollop of homemade cilantro butter.
The chicken can be sliced and served over a salad the next day for lunch.
This butter is amazing and so versatile. You will get some extra to experiment with on your own. You should ty it on grilled steaks or on a mashed potato!

Alexa starts highschool this Wednesday, and I asked her what she wanted for dinner that night. She has requested pork chops in a gravy. This meal is easily my family's favorite and is made with love. It takes 4 hours to cook! The pork chops are so tender you don't need a knife to cut them. I serve it over rice with corn as a side. However, my family mixes it all together and gets a little bit of everything in every bite. The next day, I shred the leftovers and have as a pulled pork sandwich or on a flatbread.

Let me know by Tuesday morning if you are wanting "rice and gravy" for your family Wednesday night. Cauliflower rice or no rice is also an option. Let me know in the comments.

This week's dish will consist of a braised chicken breast that will be simmered in an Italian seasoned balsamic glaze along with diced tomatoes and sliced onions. To finish off the braised balsamic chicken breast will be a side of fresh oven roasted green beans.

It was so much fun cooking in the kitchen with Joe last night to prepare for today's pickup. I am thankful for those of you who asked for no pasta. I was able to get it to a stopping point at 1am last night. This dish was made with the whole family's love (and discussion).

This week I am preparing a truly unique Cajun dish. Many of you have had jambalaya, but have you even tried pastalaya? Pork, chicken, and sauage cooked to perfection and blended with Cajun spices. Hold the rice because we are having pasta with it.
