Herb Roasted Chicken with Corn Salad & Fresh Greens 🍗🥗
This easy chicken dinner is bright, filling, and perfect when you want a homemade plate with fresh crunch and cozy flavor.
📝 Ingredients:
For the chicken:
4 chicken drumsticks or chicken pieces
2 tbsp olive oil
1 tbsp lemon or lime juice
2 cloves garlic, minced
1 tsp paprika
½ tsp dried thyme
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
1 tsp salt
½ tsp chili flakes, optional
For the sweet corn salad:
2 cups corn kernels
½ red bell pepper, finely diced
½ yellow bell pepper, finely diced
2 tbsp chopped onion
1 tbsp butter or olive oil
Salt and pepper, to taste
1 tbsp chopped parsley or cilantro
For the fresh garden salad:
3 cups chopped lettuce
½ cucumber, sliced or chopped
½ red bell pepper, sliced
½ yellow bell pepper, sliced
1 tbsp olive oil
1 tbsp lemon or lime juice
Salt and pepper, to taste
🍽️ How to Make It:
1️⃣ Season the Chicken:
Pat the chicken dry, then coat it with olive oil, citrus juice, garlic, paprika, thyme, garlic powder, onion powder, salt, and pepper for flavorful roasted chicken.
2️⃣ Bake Until Golden:
Place the chicken on a baking tray and bake at 400°F for 40–45 minutes, turning once, until the skin is browned and the meat is juicy.
3️⃣ Make the Corn Salad:
Warm butter or olive oil in a skillet, then add corn, diced peppers, onion, salt, and pepper. Cook for 5–7 minutes until tender for a simple sweet corn salad.
4️⃣ Toss the Greens:
Add lettuce, cucumber, and sliced peppers to a bowl. Drizzle with olive oil and lemon or lime juice for a crisp fresh garden salad.
5️⃣ Plate and Serve:
