Last night’s Pancit Bihon with Pork Belly was hitting so hard we had to bring out the secret weapon: The Noodle Sandwich. Is it a "double carb" situation? Yes. Is it nutritionally redundant? Absolutely. Does it slap every single time? YOU BET.

We didn’t have the pandesal, so Aunt Millie’s white bread had to step up to the plate. It’s not about the bread; it’s about the spirit of the sandwich.

Yes, that’s shrimp swimming in butter. Yes, there’s Sprite involved. No, we will not apologize. Old-school trick, passed down kitchen to kitchen — a little soda to cut the richness, lift the sauce, and make you go back for one more spoon of rice (or three).

Garlicky, buttery, saucy, fingers-out kind of meal. Served with okra on the side so we can pretend it’s balanced.
