One Pot Meaty Tortellini is a pot full of tender cheese tortellini covered in a tomato sauce filled with ground beef and mini pepperoni. The whole thing is covered in a layer of melted cheese as a finishing touch. This one pot meal is perfect for a weeknight meal.

This is a different and fun way to serve mashed potatoes at . Instead of a big bowl of the classic side dish make these individual cheesy mashed potato puffs. You can use individual muffin tins, custard cups, or ramekins. Arrange the tins on a small Lazy Susan or decorative tray on the table, or pop the puffs out of the tin and arrange in a bowl or on a plate. You could make some servings in disposable tin custard/pudding cups to easily send leftovers home with guest.
CHEESY POTATO PUFFS
2 cups mashed potatoes, cooled
1 1/2 cups sharp cheddar cheese, shredded or any cheese that you like
2 large eggs, beaten
1/4 cup cream
1/4 cup sour cream
2 green onions, chopped
Salt and pepper to taste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon smoked paprika
Preheat your oven to 400°F
Lightly grease a muffin tins, custard cups, or ramekins
In a large bowl, combine all the ingredients, mix until smooth and creamy.
Use an ice cream scoop to place the potato mixture into the prepared muffin tins, filling each cup about three-quarters full.
Bake for 20-25 minutes, until the tops are golden and the puffs are set. Sprinkle with fresh, chopped herbs. Serve Warm, with gravy if desired. Makes dozen
You can easily double or triple this recipe for a crowd.
