Fairytale Pumpkin, both canned and roasted! This is the largest pumpkin I have ever gotten from the U-pick farm so far for canning! It is beautiful, unique, super juicy, with tons of seeds, and an incredibly fragrant scent! Roasted, was honestly not my favorite. 🤷‍♀️ It didn't caramelize how I would have liked, and instead mainly got soft. However, I think this is going to make INCREDIBLE pumpkin bread, and I want to try it as a soup, as well! I am saving these seeds for my collection! 😁🧡🎃🌱🧡

I finally opened a jar of the dill pickles I canned in July! The good news is that the pickling cucumbers held up beautifully throughout the canning process! That means that the special low-temp approved canning method (keeping the temperature PRECISELY at barely a simmer) and using Pickle Crisp worked! The bad news is that I'm not a personal fan of the flavor. 😅 To me, they taste like vinegar and not much else. The beauty of pickling, however, is that there's a thousand ways to pickle, endless varieties of vegetables to try, so there's not one definitively "correct" way to make a pickle. What tastes good to one person may not taste good to someone else, and that's okay! I gifted my remaining jars to make space in my pantry, and I look forward to the results of my latest batch of lactofermented dill pickles! 💚🥒🫙💚

*Edit to add: both batches of lactofermented pickles spoiled, and had to be discarded. :-( I had managed to get lots of fresh pickling cucumbers from the U-pick farm, but they were on the bigger side, and I found a few pre-picked bags of perfectly-sized pickling cucumbers at the farm stand, but they did not successfully lactoferment. Pickles are touchy... We'll try again next year!

Eggplant Parmesan from today, using an eggplant from the U-pick farm! The chicken was cooked in my cast iron pan last night! Look at that color!! The pan is just showing off at this point. 😎 These were heirloom chicken breasts from Trader Joe's, which I haven't cooked before. I pounded them flat, breaded with added seasoning, and fried in olive oil. This was probably some of the tastiest chicken I've had in years!! This is what chicken tasted like when I was a kid, when animals hadn't reached the current-day levels of modification. There's something to be said for a smaller portion with more flavor and nutrients. My son was skeptical at first, as he often is with new foods, but he ended up gobbling up his entire piece!

I made a very special gift set today for a very special person! 🥰🍞🫙🤎 I love that I was able to zhuzh it up a bit with golden bakery boxes left over from my chocolate bomb days! So pretty! Makes me happy.
