Dixie's Down Home Dishes Life is hectic and I find solace in cooking. I’d love to prepare homemade meals for friends to simplify your daily mealtime dilemma.

My sauces are made from scratch, vegetables are always bought fresh. I can prepare meals for dietary restrictions too.

I will start making tamales next week. The first type I am making is Chile cheese with Monterey Jack cheese and roasted Anaheim chiles. The cost is $25 per dozen. Let me know if you want to order any.

Hi folks! I had a great time in Vegas this week and am headed to SoCal for work next week so my next cooking weekend will be October 28th.

The menu will include chicken Marsala which is a chicken breast pounded flat, seasoned with salt and pepper and a light dusting of flour then pan seared and topped with a Marsala wine sauce and sautéed mushrooms. This will be served over creamy mashed potatoes and a side of roasted broccoli and carrots ($12).

The second dish will be Over the Top smoked chili which is smoked for 7 hours with a side of honey corn bread. ($8)

Hi folks. The next date I will be cooking is Sunday, October 8th. I will be making a creamy risotto with chicken, mushrooms, onion and broccoli then topped with fresh grated Parmesan. This will be served with a green salad made with spring greens, carrots, cucumber, tomatoes and croutons and served with your choice of dressing: creamy pesto, balsamic or Italian ($12).

The second option will be green chili stew made with ground beef, ground pork, green Chiles, crushed tomatoes, beef stock, potato and onion and served with flour tortillas ($6).

The menu for this Sunday will be Chicken Piccata served with a garlic butter pasta and a Caesar salad. the chicken breast is pounded flat, seasoned with salt and pepper, lightly dredged in flour, then seared in a fry pan. The sauce includes, chicken broth, lemon juice and zest, capers, and a dry white wine. ($12)

The second meal I will make is a Chinese chicken salad with Napa cabbage, carrots, sugar snap peas, mint, romaine lettuce, red bell pepper, scallions, chicken, and crushed peanuts. It is served with a sesame soy dressing. ($10)

Hi Folks! I made creamy chicken and noodles last night. I hate to make it in small batches, so I have 4 quart sized jars available for sale if anyone is interested. The cost is $10/quart. A quart contains two 2-cup servings.

Guess what? I’ll be back to cooking soon, although I won’t be able to do it every weekend with my current schedule. The first weekend I will be back to cooking will be the weekend of September 23-24th. Any recommendations for a menu?

Finally some progress!! We’ve been without a kitchen since April. Installation of cabinetry began yesterday and they will return Monday. I picked out the slabs for the countertop but that may take up to 3 weeks. At least I can begin putting stuff away when they are done with the cabinetry.

Hi folks,

I had an amazing and very relaxing trip to the Mexican Riviera. Thank you all for your kind words and well wishes. I honestly haven’t felt that relaxed in years!!

When I returned home, my husband had started the kitchen demolition. So…I won’t be cooking again until I have a full kitchen. My cabinets are supposed to arrive on May 10th and then we need to schedule the workers for the cabinetry and the countertops. And last, new flooring. I’m praying things fall into place with scheduling the work and everything is done some time in May. Wish us luck!

Hi folks!

This cooler weather is making me crave some warm comfort foods. I will be making Shepard’s Pie with ground beef, carrots, peas, onion, mashed potatoes, cheese and a brown gravy with Dutch Crunch bread and a green salad and your choice of creamy Pesto or balsamic dressing. ($10)

The second meal I am making is Over the Top Chili which is made in the smoker by cooking the meat on a rack over the chili pot and then crumbling it into the the chili at the end for a warm and delicious flavor. This will be served with honey cornbread. ($6)

I will be taking a two week break after this weekend to prepare for and enjoy a trip to the Mexican Riviera with some of my childhood friends from Job’s Daughters.

Hello friends! Sorry for the late notice but it’s been a crazy week. This weekend I will be making teriyaki chicken with your choice of white or brown rice, stir fried veggies (carrots, onion, broccoli, and celery) and an Asian cucumber salad with a sesame soy dressing. ($10).

The second meal will be my spin on Olive Garden’s chicken and gnocchi soup made with a creamy chicken base, roasted chicken, gnocchi, carrot, celery, onion and spinach. ($5)
