I’m going to use my Pampered Chef Deluxe Air Fryer tomorrow and make these chicken sandwiches. My mouth is already watering!

This Air Fryer Chicken Sandwich (Chick-fil-A Copycat) recipe is the best homemade meal the whole family will love! The chicken is brined in pickle juice and buttermilk, which produces tender and juicy chicken with a crispy breading. Add in cayenne pepper and fresh veggies for the spicy deluxe!

I wish I could make cookies today but my toddler who won’t nap says I better make them tomorrow instead. On my list are Doubletree Cookies, Gingerdoodles, and I’ll make some chocolate cupcakes since it’s our toddlers 2nd birthday on Monday!

If I had all the time in the world (and ALL the butter) I’d also be making Chocolate Crinkles. If you haven’t tried them, they are a must. You don’t need any butter ready and they taste like brownies in cookie form.

Today is a day to be thankful. I’m thankful we have an adorable foster child right now whom was so easy to fall in love with. I’m thankful we got the approval to bring her up to our home in Lake Tahoe for a little getaway. I’m thankful we got here just three days after a pipe had burst and flooded our kitchen and basement (despite having the heater on constantly at 60 degrees). I’m thankful the insurance company got here as quickly as possible. I’m thankful that we are now going to get a much-needed remodel on our home with all original kitchen and carpeting from the 70s. I’m thankful our little foster girl had a diaper blowout and decided to smear it all over 5 carpeted stairs in our home because now we will also be re-carpeting. I thankful we left our sweet dog with the babysitter because she would not have been fun with all the people coming in and out of our home at the moment. I’m thankful for Hope’s Closet for helping us with warm clothes because our little one is so happy playing outside in the snow and not even noticing all the chaos right now.

What are you thankful for today?
