Cheesy Baked Zucchini Casserole
Tender zucchini slices baked in a rich, cheesy custard with a golden bubbly top. Low-carb, kid-friendly, and customizable!

Ingredients
2 medium zucchinis, thinly sliced
1 cup shredded cheese (cheddar, mozzarella, Gruyere)
½ cup grated Parmesan
2 large eggs
½ cup milk or cream
1 tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
1 tbsp olive oil (for greasing)
Optional: breadcrumbs or almond flour topping
Optional herbs: parsley, thyme, oregano
Instructions
Preheat oven to 375°F (190°C). Grease baking dish.
Prep zucchini: Salt and blot slices for less moisture (optional but recommended).
Whisk eggs, milk, spices, salt & pepper.
Assemble: Layer zucchini, pour custard, top with cheese and Parmesan.
Bake uncovered 25–30 mins until golden and set.
Cool & garnish with herbs. Serve warm!
