Fun fact!

After Christmas, standing rib roasts, or prime roasts as some call them, typically go on sale at your local grocery store. This can make something elegant, be not quite as expensive. 🤑

Prime rib is a simple yet time consuming process. It’s important to get a hefty seasoning of salt, pepper, garlic, rosemary, and paprika (my addition) on the outside. I let my roast sit at room temperature for several hours with seasonings on. This will help with the cooking process.

The first 20 minutes in the oven is the most important for creating your signature prime rib crust. Preheat your oven to 500°. Make sure your roast is fatty side up and you have it on a rack. Let that thing cook on high for 20 minutes. Next,turn the oven temperature down to 325 Degrees and finish cooking to your desired temp. I cook mine to 120° to get a perfect medium rare. Lastly, let your roast rest for at least 10 minutes before slicing.

Baked Brie with cranberry orange compote and walnuts with warm sourdough.

I LOVE Brie and find it even more enjoyable when it is warm and melty. Brie pairs well with tart fruit flavors likes berries and cherries

I did it!!!

Those of you that follow along know that I have been on a health journey for about a month. I made it to the end of my time and have reached the point that I can start adding certain foods back into my diet.

Over the course of a month I have lost 14 pounds. I have had very few headaches, no heartburn, no two pm crash, no random body pains, no stomach aches or bloating, and no bathroom issues.

Here are the key take aways I have learned.

💚 Eat a wide variety of food
💚 Eat raw vegetables and fruits when ever possible
💚 Drink more water
💚 Don’t let yourself get hungry
💚 Be mindful of how you eat out
💚Progress is in all the small decisions
💚Listen to how your body feels after you eat
