Healthy Low Fat Apple And Oatmeal Muffins

Ingredients:
- 1 1/2 cups quick oats
- 1 1/2 cups apple juice
- 2 teaspoons vanilla extract
- 1 1/2 cups whole wheat flour (or spelt flour)
- 1/2 cup sugar
- 2 teaspoons baking powder
- 2 medium apples, grated
- 1 teaspoon cinnamon
- 4 egg whites, beaten to soft peaks
- apple, wedges to garnish (with or without peel)

Steps:
1) Soak the oats, apple juice, sugar and vanilla for 30 minutes.

2) Mix in the flour, baking powder, grated apple and cinnamon.

3) Fold in the beaten egg whites; Spoon into 12 muffin tins.

4) Top muffins with 2 sliced apple wedges (cut quarters of apple into 3 or 4 wedges) and bake at 170° C (338°F) for 25 - 30 minutes until muffins and cooked though and golden.

5) Cool in pan for a few minutes, then remove from pan and cool on wire rack.

Rosemary's Mini Quiches

Ingredients:
- 2 sheets puff pastry (ready made)
- 1 onion, chopped
- 4 slices bacon, diced (fat removed)
- 2 eggs, lightly beaten (don't just give them a stern talking to!)
- 1/2 cup cream
- 1/2 cup milk
- 1/2 cup grated cheese
- 2 tablespoons chopped parsley
- salt
- fresh ground black pepper

Steps:
1) Line a greased muffin tin with circles of pastry (I use the top of a glass to cut out a round).

2) Saute onion and Bacon or microwave med/high 3 minutes.

3) Combine with remaining ingredients, season to taste.

4) Spoon mixture into pastry hollows Bake 20 mins 180C/ 350°F.

"Oven Baked White Rice, Perfect Every Time!"

Ingredients:
- 1 tablespoon butter or 1 tablespoon olive oil
- 1/2 cup chopped onion
- 1 cup long-grain white rice
- 2 cups chicken stock or 2 cups vegetable stock
- salt, to taste
- fresh ground black pepper, to taste

Steps:
1) Preheat oven to 350°F.

2) In a medium stovetop-to-oven pot melt butter or olive oil over medium heat.

3) Add chopped onions and cook 3 to 5 minutes, stirring until softened.

4) Add rice and stir until well coated.

5) Add chicken or vegetable stock, salt and pepper to taste.

6) Bring to a boil.

7) Cover and bake until the rice is tender and the stock is absorbed, about 20 to 25 minutes.

8) Let stand, covered for 5 minutes before serving.

Cpk Thick Tomato Sauce

Ingredients:
- 1 tablespoon extra virgin olive oil
- 2 teaspoons minced fresh garlic (about 2 cloves)
- 2 roma tomatoes, diced into 1/2 inch cubes (plum)
- 1 teaspoon chopped fresh oregano leaves (or 1/2 teaspoon dried)
- 1/2 teaspoon salt
- 1 pinch fresh ground black pepper
- 1 tablespoon tomato paste

Steps:
1) Cook the garlic in the olive oil in a nonstick pan, over medium heat for 1 to 2 minutes, until the garlic's just starting to be translucent.

2) Add the remainder of the ingredients except for the tomato paste, reduce heat slightly and cook, stirring frequently, until the tomato juices evaporate (about 10 minutes).

3) Remove from heat and stir in tomato paste.

My Mom's American Chop Suey

Ingredients:
- 1 (1 lb) box elbow macaroni, cooked according to package
- 1 lb hamburger
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 -2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1 (28 ounce) can diced tomatoes

Steps:
1) Cook Elbows according to package directions.

2) Drain and set aside.

3) In a large skillet, brown the hamburg, onion and garlic together until the hamburg is done.

4) Drain off the fat, return to skillet and add in the can of tomatoes.

5) Add the oregano and salt, bring to a boil and then lower heat to a simmer.

6) Let simmer for 30 minutes to blend flavors.

7) After 30 minutes, add the elbows to the hamburg mixture and stir to coat.

Belgian Buns

Ingredients:
- 4 ounces margarine or 4 ounces butter
- 2 eggs
- 1/2 pint milk
- 1 lb flour
- 4 ounces sugar
- 1 ounce yeast
- 3 ounces raisins or 3 ounces sultanas

Steps:
1) Heat milk with 3oz of fat till it is just melted.

2) Cream the yeast with 3oz sugar.

3) Add to milk.

4) Sieve flour into a large bowl.

5) Make a well in center.

6) Beat in the eggs and yeast.

7) Mix to a soft dough.

8) Cover with a damp cloth and put in a warm place for 1 1/2 to 2 hours till doubled in size.

9) Turn on to a floured surface and knead well.

10) Roll into oblong about 16 x 12 inches.

11) Melt reminaing fat and brush over dough, sprinkle with dried fruit and remaining sugar.

12) Roll dough up tightly and cut into about 16 slices.

13) Put onto a baking sheet for another 20- 30 minutes.

14) Bake at 450°F for about 20 minutes.

15) Keep an eye on them.

16) When cold, ice with white water icing and pop cherry in middle.

Honey-dijon Pork Chops

Ingredients:
- ¼ cup Dijon mustard
- ¼ cup honey
- 1 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 4 (1-inch thick) boneless pork loin chops

Steps:
1) Preheat oven to 350°F (175 degrees C). Grease a baking dish.

2) Mix Dijon mustard, honey, black pepper, and garlic powder in a bowl. Arrange pork chops in prepared baking dish and pour mustard mixture over pork.

3) Bake in preheated oven until pork is slightly pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 145°F (63 degrees C).

Bubba's Jambalaya

Ingredients:
- 6 slices bacon, cut into 1 inch pieces
- 1 cup chopped celery
- 1 green bell pepper, seeded and chopped
- 1 onion, chopped
- ½ pound cubed cooked ham
- ½ pound cubed cooked chicken
- ½ pound cubed smoked sausage
- 2 (14.5 ounce) cans crushed tomatoes, with liquid
- 2 cups beef broth
- 2 cups chicken broth
- 1 teaspoon dried thyme
- 2 teaspoons Cajun seasoning
- 2 cups uncooked white rice
- ½ pound salad shrimp

Steps:
1) Heat a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon pieces with a slotted spoon, and set aside. Add celery, bell pepper, and onion to the bacon drippings, and cook until tender.

2) Add the ham, chicken and sausage to the pot, and pour in the tomatoes, beef broth and chicken broth. Season with thyme and Cajun seasoning. Bring to a boil, and add the rice. Bring to a boil, then turn the heat to low, cover, and simmer for about 20 minutes, until the rice is tender.

3) Stir in the shrimp and bacon just before serving, and heat through. If you use uncooked shrimp, let it cook for about 5 minutes before serving.

Grilled Cilantro-lime Pork Loin Sandwiches With Coleslaw

Ingredients:
- 1 1/4 cups packed fresh cilantro leaves
- 3/4 cup packed golden brown sugar
- 1/2 cup soy sauce
- 3 large shallots, diced
- 5 garlic cloves, peeled
- 1 tablespoon freshly grated lime zest (1-3 limes depending on size)
- 1/4 cup freshly squeezed lime juice (1-3 limes depending on size & juiciness)
- 1 teaspoon hot sauce (Sriracha Thai hot sauce is recommended)
- 1 cup olive oil
- 1 1/2 cups cilantro lime marinade (half of recipe above)
- 2 lbs boneless pork loin, fat removed
- 1/4 cup butter, at room temperature
- 4 sandwich buns, split (poppy seed, onion or kaiser rolls, use buns or rolls fresh from the bakery)
- 1 1/2 cups cilantro lime marinade (remaining half from recipe above)
- Coleslaw (use your favorite recipe that will complement the flavor of the cilantro-lime pork)

Steps:
To marinate the pork:
1) Blend cilantro, brown sugar, soy sauce, shallots, garlic, lime peel and juice, and hot sauce in a food processor until nearly smooth. With the machine running, gradually blend in the oil. (Makes 3 1/2 cups; use half for marinade and reserve other half for prepared sandwiches).

2) Cut the pork loin crosswise into 1/3-inch-thick slices (about 20 slices total). Place the sliced pork loin in a large resealable plastic bag. Add 1 1/2 cups of the marinade and turn the pork slices to coat it all over with the marinade. Twist bag to remove air then seal the bag and refrigerate for 4 hours. Cover the remaining marinade separately and refrigerate.

To prepare the sandwiches:
1) Prepare the barbecue for medium-high heat. Working in batches, grill the pork slices until just cooked through and still moist and juicy, about 1 1/2 minutes per side. Discard the used marinade. Transfer the pork slices to a large clean platter (do not pile up the slices too much or they will overcook).

2) Spread the butter over the cut sides of the buns and grill the buns, buttered side down, until they are toasted, about 1 minute.

3) Pile the pork slices (about 5 slices per bun) on the bun bottoms. Drizzle a spoonful of the remaining unused marinade over the pork. Top with the coleslaw then the bun tops and serve immediately.

Vietnamese Marmite Mint Chicken

Ingredients:
- 3 tablespoons Vietnamese fish sauce
- 1 teaspoon sugar
- 1/2 bamboo shoot (sliced)
- 1 onion (diced)
- 5 garlic cloves (chopped)
- 4 chicken breasts (cut into large cube)
- 3 -5 stalks mint leaves
- 5 -7 red chili padi (lightly crushed)
- 5 dried red chilies
- 1 tablespoon marmite
- 1 cup steamed white rice

Steps:
1) Heat oil and sauté onions, dried chilies & chopped garlic over medium flame until translucent.

2) Add chicken cubes & cook until almost done, stir frying all the time. Add a dash of fish sauce & keep on frying.

3) Mix in sugar. Turn up heat, toss in bamboo shoots, red chilies, Marmite & finally the mint leaves. Stir well & remove from heat. Serve over steamed white rice.

Spiced Pumpkin Spring Rolls

Ingredients:
- 1 (15 ounce) can pumpkin puree
- 2 eggs
- 2 teaspoons cinnamon
- 1 teaspoon cardamom
- 1 teaspoon grated fresh ginger
- 1/4 cup honey
- 1/4 cup sugar
- 1/2 teaspoon almond extract (or vanilla)
- 1/4 teaspoon salt
- 1 (16 ounce) package spring roll wrappers
- 2 -3 tablespoons canola oil
- powdered sugar (to garnish)

Steps:
1) Mix pumpkin, eggs, spices, honey, extract and salt in a medium bowl. Taste, and add sugar until it's sweet enough for your tastes. You may not need the full amount.

2) Chill for 2-hours to firm up a little.

3) Preheat oven to 350F.

4) Place 1-2 tbsp pumpkin filling on the center of each spring roll wrapper, fold in outside edges, and roll up. If your wrappers are very large, you may want to cut them in half first.

5) Lightly brush spring rolls with oil, and bake until lightly browned and crispy, about 15 minutes. If you prefer, these can also be fried.

6) Dust rolls with powdered sugar and more cinnamon if desired.

Sizzling Green Beans

Ingredients:
- 1 lb fresh green beans, cut into 3-inch pieces
- 4 tablespoons olive oil
- 1/2 teaspoon crushed red pepper flakes
- 2 garlic cloves, minced
- 1 -2 large tomatoes, chopped
- 2 tablespoons parsley, chopped
- 2 teaspoons basil
- 1 teaspoon thyme
- 1 teaspoon oregano
- salt
- pepper
- parmesan cheese

Steps:
1) Put beans in a large pot of boiling water and boil 5-7 minutes, drain and then plunge into ice water to stop the cooking.

2) Set the beans aside.

3) Heat olive oil in a large skillet over medium heat and add crushed red pepper and cook for 1 minute.

4) Remove pepper flakes and add garlic, tomatoes, and seasonings, except the parmesan cheese.

5) Now turn heat to low and simmer, covered, for 20 minutes.

6) Add the beans to the mixture and heat through, about 8-10 minutes.

7) Sprinkle with parmesan cheese and serve.
