Brown butter in a dark pan is trickier, but you can totally do it. 🧈

Here’s how I do it for my Brown Butter Maple Pecan Cinnamon Rolls:

✨ Watch the color and notice the aroma. Watch the milk solids and listen for the foam to settle.
✨ Pour it into a light dish right away so it stops cooking.
✨ Toast your pecans in that same skillet. Brown to burned is a fine line, so stay close!

I really wanted every recipe in my Fall Cinnamon Roll Collection to begin with the same Signature Dough. One beautiful dough, transformed into several different fall flavors—that’s simpler for you and exactly the kind of baking I want to teach.

But pumpkin had other plans.

My first dough was soft and lovely, but it rose more slowly and baked up a little too gooey. Pumpkin adds more than flavor; it changes the structure of the dough.

So I went back to the mixer and tested it with bread flour. At 4¾ cups, I had a soft, beautiful dough with a strong windowpane—and enough structure to support pumpkin butter, a light caramel bottom, and cream cheese frosting.

Sometimes a recipe needs permission to be the exception.

Think soft bakery-style rolls, warm spiced apple filling, buttery crumble…and I haven’t even decided what I’m doing to the top yet. 👀
