What egg plant recipes do you have?
This was my first attempt at a oven baked Parmesan.
Brushed with a basil olive oil, sprinkled with a flake salt.
Cooked for 25 minutes at 375 degrees.
Sliced tomatoes added with chunks of fresh mozzarella. Cooked until cheese melted.
Fresh basil as a garnish.
It was delicious.
