Rainy days call for simplicity… chicken salad

Ingredients
Chicken
Celery
Spring onion
Thomy mayo (a great mayo is super important)
Seasonings: salt, paprika, garlic powder (roasted), vegeta and black pepper

Boil your chicken, dice it, mix all ingredients together. Serve on toast, or with crackers

🧩 It’s autism awareness month and this is my little one who is on the spectrum.

It took me a little while to come to terms with it, and with each passing day as it gets harder it gets branded deeper in my DNA.

I want all parents especially Albanian parents to know that it’s ok. I know the last 3 years we have opened up to one another and we have created a little community. I am so proud of the parents that have opened up to me and helped me through the stigma. I am also grateful to the parents who use our store as practice and how to shop with your kiddos who are on the spectrum. These are life skills we don’t have safe spaces to practice in.

Staten Island in general has been the most supportive place for our little family. It almost seems like every other person I meet is a teacher or a para and they all are invested in helping our kids progress. It’s beautiful to see the passion and dedication, this fuels us as parents on the days that we run out.

And then you get a little message out of the blue from a social media friend, completely disrupting our routine and chaos in the best and most heart warming way possible. Making us stop and just embrace the moment.

I couldn’t accept it for me but I know my little ones school needs it. I didnt get a chance to take a picture of the full trunk we were able to fill but the one thing she was able to carry I had to take keep the memory.

To the person who thought of me, may all your Duas be answered and prioritized , you are a kind soul and I am grateful for your support since day one. I can’t wait to see you excel and propel in this journey we call life.

Even if I tried to list all of the items, I would forget half, this was a beautiful event, super proud to be a part of it. By my knowledge this is the first halal Albanian/Balkanic charcuterie table.

Extremely grateful I am doing this!

16 large byreks were on the menu and it was so adorable to watch the people who had nostalgia look at the table and spot their favorites, it was like playing I spy but with all your favorite foods.

Special thanks to and for helping me pull this off. I think we gave Gafur a work out slicing over 40lbs of meat. 😅

Didnt expect how many faces would light up when they saw ajvar, fefferoni, pickles and djath dhie. All from !

The main focus was this table so we forgot to take a picture of the desserts which included, tres leche, tullumba, chocolate cake, and white chocolate raspberry cake.

Sometimes peace looks like this……

That routine that keeps you alive and well, that peace that comes with knowing you have a place to show up to. A family you see grow, the people that come to talk something out, or the ones that need something to eat and just trust you.

There is solace in simplicity, this is my peace, seeing and greeting you guys, making you guys laugh. Not gonna lie sometimes I think you guys come for my jokes 😅
