Sweet potato chunks

Directions:
Preheat your oven to 425 degrees F (220 degrees C). Toss the sweet potato chunks with olive oil, salt, and black pepper in a large bowl. Spread them out on a large rimmed baking sheet and roast until browned and tender, about 40 minutes, stirring halfway through.
Cook the bacon in a large skillet over medium heat until crisp, about 10 minutes. Transfer the bacon to a bowl, keeping the grease in the skillet. Cook the onions in the bacon grease until browned, about 10 minutes, then reduce the heat to low and continue cooking until they are very soft, brown, and sweet, another 10 to 15 minutes, stirring often. Combine the onions with the bacon in the bowl and set aside.
Pour the maple syrup into the hot skillet with thyme and bring to a rolling boil. Reduce the syrup by half, about 3 to 4 minutes. Add the roasted sweet potatoes and the onion-bacon mixture into the skillet, stirring to coat the vegetables with the maple glaze.
