Yield
Yield: 12 cups
Ingredients
For the brownie base:
• 1 box brownie mix (plus eggs, oil, and water as directed)
For the cheesecake center:
• 8 oz cream cheese, softened
• 1/3 cup granulated sugar
• 1 egg
• 1 tsp vanilla extract
For the chocolate topping:
• 1 cup semi-sweet chocolate chips
• 1/2 cup heavy cream
How to make it
1. Preheat oven to 350°F. Line a muffin pan with cupcake liners.
2. Mix the brownie batter according to package directions. Spoon into liners, filling halfway.
3. In a bowl, beat cream cheese, sugar, egg, and vanilla until smooth and creamy.
4. Add a spoonful of the cheesecake mixture right into the center of each brownie cup.
5. Bake for 18–22 minutes until the brownie cheesecake cups are set but still soft in the middle. Let cool completely.
6. Heat the heavy cream until hot, then pour over chocolate chips. Let sit, then stir until smooth and glossy.
7. Spoon the ganache over each brownie cheesecake cup, letting it gently spread over the top.
These brownie cheesecake cups turn out soft, rich, and perfectly creamy every time.
Serve slightly chilled for that thick, creamy center and extra fudgy bite.
