2nd attempt at Sheetpan Roasted Tomato Soup.
Better than my 1st... but still needs tweaking.
Of course it'll always taste better with a grilled cheese sandwich dipped in it. 😀

I've been wanting to make a White Bean Dip. I had Giada's version... but I also recently found another that came thru my feed recently.. with slightly different ingredients.
So I made both to figure out which one I liked more.
While both are good.. the one with the Parmesan Cheese... wins hands down.
Bringing to a No Kings Day (a nod in Linda Hannon's direction) & will blend both together (& probably add more parm). ❤️

I finally tried slicing all these cherry tomatoes.. in bunches... but used my hand & not a plate/lid on top.  It worked!...

It worked! Took me 10 seconds to do 2 bunches. & no cuts on my hand either. ❤️

Have you ever left for work in the morning.. get 1/2 way there... & realize you left your lunch... & pizza dough on your island.. totally forgetting about it?
If not... i just did it for you.. so you don't have to. Ugh. So not only did I have to buy my lunch today. . That dough was going to get all 'over proofed' ... or whatever happens when you leave it at room temp for too long.
But i didn't want to toss it.. hoping it would still bake up decently.
It has a garlic & olive oil base... topped with Ricotta & Mozz... baked up nicely... & then topped with Fresh Arugula & Prosciutto... & will be given a drizzle of that awesome Mike's Hot Honey. Chef's kiss ❤️
