GF food in the day of the life of… Mama K!

For breakfast: the best GF English muffin ever by Queen Street Bakery with smooth peanut butter and red grapes 🍇

Lunch: A Greek salad with croutons for good measure of course 😌

Snack: salted cashews… need we say more 😋

Dinner: Egg roll in a bowl - sesame chicken thighs with Asian cabbage slaw. Delish!!! One of Mama K’s favorites. 😊

I have a few favorites from the Fitchburg Wicked Gluten Free Expo, but Uncle Joey’s Cannoli takes the top spot. It was honestly a spiritual experience being able to have a cannoli again after so many years that actually tasted authentic from flavor of the filling to the texture of the shell. And great news… they serve all of New England! I can’t wait to find them again and stock up 🤭

More and more products are popping up labeled “gluten free” but still list wheat in the ingredients. 🌾
So… is it safe for celiacs? Let’s break it down ⬇️

❌ Most wheat-based ingredients are NOT safe.
Even if they’re “gluten removed,” they can still contain enough gluten to trigger an autoimmune reaction. Things like wheat protein isolate or hydrolyzed wheat protein should be avoided.

⚠️ The exception: wheat starch.
In some cases, wheat starch is specially processed to remove gluten and can be certified gluten free (under 20 ppm). These products are more common in Europe, and while some celiacs tolerate them, others choose to avoid them out of caution.

✅ The safest bet:
Stick with naturally gluten-free grains (like rice, corn, sorghum, millet, quinoa, and certified GF oats) and always look for a certified gluten-free label.
Because when you live with celiac disease, “gluten removed” does not always mean safe. 🚫

Because being made with gluten-free ingredients doesn’t make it 100% gluten-free when made in a shared kitchen 🥲

When Mama K was diagnosed with celiac 15 years ago, she realized if she wanted food that actually tasted good, she’d have to make it herself. 🥖💛 I got my own celiac diagnosis 4 years ago, and now I’m following in her footsteps — these two loaves were the very first I ever baked for us!
Gluten-free products have come a long way, but nothing beats a fresh loaf you know is safe. And if baking feels intimidating, don’t worry — if I can do it, you can too. Start small, have fun, laugh at your mistakes and celebrate your victories ☺️
