BETTER-THAN-TAKEOUT BEEF AND BROCCOLI 🥦

🥩 FOR THE WOK

• 1 lb beef, thinly sliced
• 2 cups broccoli florets
• 1 carrot, sliced
• ½ onion, sliced
• 2 tablespoons oil

🥣 MAGIC SAUCE

• 3 tablespoons soy sauce
• 1 tablespoon oyster sauce
• 1 tablespoon brown sugar
• 3 minced garlic cloves
• 1 teaspoon cornstarch
• ½ cup water

🔥 MAKE IT

Sear the beef in a very hot skillet until beautifully browned. Remove it and stir-fry the broccoli, carrot, and onion until slightly crisp.

Pour in the magic sauce, return the beef, and toss until everything is covered in a thick, glossy coating.

Serve over fluffy white rice and enjoy every saucy bite.

Philly Cheesesteak Sliders

These Philly cheesesteak sliders feature Hawaiian rolls that are layered with tender steak and melted cheese plus onion and peppers for the perfect party appetizer or meal!

Ingredients


1 package Hawaiian rolls
2 tablespoons olive oil, divided
1 pound steak, thinly sliced
½ large onion, thinly sliced and divided
1 green bell pepper, thinly sliced
8 slices provolone cheese
3 tablespoons butter, melted
2½ teaspoons concentrated beef stock
Instructions

Preheat the oven to 350°F. Line a baking sheet with aluminum foil and spray with cooking spray.
Slice the rolls in half horizontally to separate the top and bottom, keeping them together as one slab. Do not break into individual rolls.
Place the bottom half on the baking sheet.
Heat 1 tablespoon olive oil in the skillet. Season the steak with salt and pepper and cook over medium heat until done, remove from skillet, and place on top of the bottom slab of rolls.
Take about 10 pieces of your sliced onion and set them aside. In the same skillet heat the remaining 1 tablespoon olive oil and cook green pepper and remaining onion together until tender.
Place the green pepper and onion on top of the steak.
Top everything with 8 slices of provolone cheese. Place the other half of the rolls on top.
Melt butter and concentrated beef stock together. Stir to combine. Brush mixture over top of rolls. Finely dice reserved onion slices and sprinkle over top of rolls.
Bake in the preheated oven for 10 minutes, or until cheese is melted and the tops have started to brown. If necessary, cover the rolls with aluminum foil to prevent them from browning too much.
Slice into individual sliders and serve warm.
Notes
You can assemble these sliders up to a day before baking and leave them covered in the fridge until you’re ready to pop them in the oven.
Don’t skimp on the melted butter. It soaks into all the nooks and crannies and adds a ton of flavor to both the top and the bottom half of the rolls.

Blueberry Castella Cake

Ingredients
• 6 large eggs
• 1 cup (200g) sugar
• 1 cup (125g) cake flour, sifted
• ¼ cup (60ml) milk
• ¼ cup (60ml) vegetable oil
• 1 tsp vanilla extract
• 1 cup fresh or frozen blueberries
• 1 tbsp flour (for coating the blueberries)

Method
1. Preheat the oven to 160°C (320°F) and line an 8-inch square pan or 9×13-inch baking tray with parchment paper.
2. Toss the blueberries with 1 tablespoon of flour and set aside.
3. Warm the milk and vegetable oil together, then stir in the vanilla extract.
4. Beat the eggs and sugar until pale, thick, and tripled in volume.
5. Gently fold in the sifted cake flour until just combined.
6. Fold in the milk-oil mixture carefully.
7. Gently fold in the coated blueberries.
8. Pour the batter into the prepared pan and tap lightly to remove air bubbles.
9. Bake for 30–35 minutes, or until the cake is golden and springs back when lightly touched.
10. Cool completely before slicing and serving.

Orange Cake

Ingredients
• 2½ cups all-purpose flour
• 2 tsp baking powder
• ¼ tsp salt
• 1 cup sugar
• 3 eggs
• ½ cup vegetable oil or melted butter
• 1 cup fresh orange juice
• 1 tbsp orange zest
• 1 tsp vanilla extract

Method
1. Preheat the oven to 180°C (350°F) and grease an 8-inch or 9-inch cake pan.
2. In a bowl, whisk together the flour, baking powder, and salt.
3. In another bowl, whisk the sugar, eggs, oil, orange juice, orange zest, and vanilla extract until smooth.
4. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.
5. Pour the batter into the prepared cake pan and smooth the top.
6. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.

Blender Sponge Cake.
Whip out that blender dear Foodies and whip up a Sunday sponge.
Frost it, top it with whipped cream and fruit or smother it in chocolate ganache 🍫 🍫

Ingredients
* 4 large eggs
* 1 cup (200 g) granulated sugar
* ½ cup (120 ml) whole milk
* ½ cup (120 ml) vegetable oil or melted butter
* 2 tsp vanilla extract
* 2 cups (250 g) all-purpose flour
* 2 tsp baking powder
* ¼ tsp salt

Instructions

Prepare the Batter
1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20 cm) round cake pan.
2. Add the eggs, sugar, milk, oil, and vanilla extract to a blender.
3. Blend for 1–2 minutes until smooth and slightly frothy.
4. Add the flour, baking powder, and salt.
5. Pulse just until the flour is incorporated. Do not overmix.

Bake
1. Pour the batter into the prepared cake pan.
2. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
3. Let the cake cool in the pan for 10 minutes.
4. Transfer to a wire rack to cool completely.

Serve
* Dust with powdered sugar or serve plain.
* You can also frost with whipped cream, buttercream, or chocolate ganache, or top with fresh fruit.
