Part 2 of the pulled pork dinner.

We found these huge sweet potatoes at the farmers market. I usually like mine stuffed with butter and the truvia brown sugar.

Today, my potato was fully loaded!

Very simple dinner since the slow cooker handles all of the heavy lifting. I did bake the potatoes for 90 minutes at 400, but pretty hands off for the most part.

Are sweet potatoes healthier than regular baked potatoes? Let's hope so🤣🤣
