15-Min Brownie Cookies!
Dough:
120g dark chocolate
30g unsalted butter
1 large egg
90g sugar
90g all-purpose flour
½ tsp baking powder
Splash of vanilla & a pinch of salt
Cream Filling:
150g cream cheese (room temp)
70g unsalted butter (softened)
10g powdered sugar
Vanilla extract to taste
Steps:
1. Carefully melt the chocolate and butter together (microwave in 10-second bursts so it doesn't burn).
2. Whisk the egg and sugar until light and fluffy, then mix in the cooled melted chocolate.
3. Fold in the flour, baking powder, salt, and vanilla. The dough will be sticky—chill in the fridge for 15 mins!
4. Roll into small balls (about 45g each) and space them out on a baking sheet.
5. Bake at 356°F (180°C) for exactly 15 minutes. Don’t overbake; the centers should stay fudgy!
6. The Cream: Beat softened butter and powdered sugar until fluffy. Add the room-temp cream cheese and vanilla, beating until smooth.
7. Sandwich the cooled cookies together with the cream. Enjoy!
