Egg salad is underrated. There. I said it. And perfect for Lent! (Especially if you don’t eat fish like me.)

The basic recipe for about 4 sandwiches is 8 hard boiled eggs, 1/2 c mayo, 2 t yellow mustard, 1/2 stalk celery chopped very small, 1/2 tsp onion powder, 1/2 tsp salt and pepper to taste. Delicious on some toasted wheat bread, or serve in lettuce cups! Protein packed! You can do this!

I just had to! When The Queen aka has a recipe go viral, you gotta try it! Just Google Ina Garten Brownie Pudding for the recipe.

Is mine undercooked? Yes. I made the batter and popped it in the fridge to bake off later. Tried to bring it to room temp but perhaps I failed. Anyway, if you think of this more as an ice cream topping and less of a brownie, you’ll love it!

PS this is half a batch and plenty for 4-6 ppl. It’s RICH.

BEWARE: Once you start making this Viral Doner Kebab you won’t be able to stop! It’s just too good.

Amazing idea by . I’ve made this multiple times with different recipes and I think I’ve finally settled on my version! Share this one and save it for later!

Viral Doner Kebab

2 lbs ground meat (I prefer 1 lb each ground lamb and beef, but all beef is great as well as ground chicken or turkey!)
1 small onion grated then food processed into a paste (as mushy as you can get it, you can even add a little water)
4 garlic cloves minced (add in with onion) OR 2 Tbsp Toum sauce (like TOOM from Costco)
2 Tbsp Harissa pepper paste (I like Mina brand) OR 2 Tbsp tomato paste with some spice (a dash of cayenne, some sriracha, or Calabrian chili paste)
2 Tbsp olive oil
2 Tbsp plain greek yogurt (or labneh)
2 Tbsp dried parsley or 1 Tbsp fresh (add into processor w onion & garlic)
1 Tbsp paprika
1 Tbsp sumac (if you don’t have this, skip it!)
2 tsp salt
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/4 tsp allspice (or baharat, or even cinnamon!)

After processing the onion, garlic, and parsley into a paste, mix with ground meat and all the spices and goodies. Split mixture into fourths. Place each fourth between two pieces of parchment paper and roll out thin (this can get a little messy). Fold up each flattened section of meat 4-5 times and place on a sheet pan. If desired, add some veggies to your sheet pan to roast in the oven with the meat, for example, tomatoes, onions, peppers, zucchini. Sprinkle with S&P and toss with a little olive oil.

Place sheet pan in a preheated oven at 400. Bake for about 20 minutes. (Be sure chicken is cooked all the way through, if using!) My experience has been that a lot of juices will accumulate in the pan. I tip the corner of the pan over the sink to pour off most, not all, of the juices. I then unravel the meat out of the parchment and dispose of it. Spread the meat out on the pan and pop under the broiler for 3-5 minutes until it gets some nice crispy edges on it. This could also be done in a pan but why dirty another one?

Remove from oven and cut or tear meat into pieces. Serve with your favorite sauce and toppings in your favorite kind of wrap or pita!

Nobody needs to know that you bought spinach artichoke dip from Costco, scooped it into a cast iron pan, covered it in mozzarella and Parmesan cheese, and baked it at 400° about 15-20 min until bubbly, golden, and delicious. Nobody.

Tailgate treats!!!

Easy Brookies:
2 boxes brownie mix
1 pkg mini Tollhouse refrigerated cookie dough

Make brownies as directed and spread onto a half sheet tray (12x17). Use parchment. Re-cut the 40 mini cookies and place evenly onto unbaked brownie batter. Bake 30 min at 375°. I cut these into 48 squares!

For my Maize and Blue Krispie Treats I use 2 10oz packages of mini marshmallows, 1 stick salted butter and 12 c Rice Krispies. Add in one pouch mini Oreos if desired. And decorate with 💛💙 M&Ms!

Happy Opening Day!!! ⚾️🐅⚾️🐅⚾️ Here in Detroit, that means the “official” first day of Spring. So I thought I’d give you the best and easiest - and very impressive - Spring dessert out there: Trifle!!!

Okay it may be a little 1980s… but does that matter? This bowl was practically licked clean for my niece’s 13th birthday celebration! Try it out for Easter, Mother’s Day, just a Sunday dinner and watch it disappear!

Here’s what you need:
1. Cake: Our fav is frozen Sara Lee pound cake (1 family size), but you can do homemade, angel food cake, or other sturdy loaf cake.
2. Whipped Cream: Cool Whip (1.5 containers) or homemade (I don’t recommend a spray can like Redi wip for this use).
3: Pudding: Sooo many flavors to choose from! (1 large instant box)
4: Fresh fruit: The options are endless but mixed berries are our fav. (1 container each)

I like to start and end with the whipped cream, so that the last layer of fruit has a beautiful blank canvas for you to play with. Which will you try first?

CC’s special: Pound cake, Cool Whip, vanilla pudding, strawberries, raspberries, blueberries

Lemon Rasp: Pound cake, whipped cream, lemon pudding, lemon curd, raspberries

Banana Chocolate: Pound cake or choc loaf cake, cool whip, chocolate pudding, bananas

Strawberry Banana: Angel food cake, whipped cream, banana cream pudding, strawberries, bananas

Strawberry Cheesecake: Pound cake, cool whip, cheesecake pudding, strawberries, plus a couple layers of graham cracker crumbs!
