Yesterday we were in and out so I tossed some chicken breasts in the crockpot with some BBQ sauce. Yummy pulled chicken sandwiches and today I made the leftovers into chicken salad. I love this recipe because it's great with plain pulled chicken or leftover grilled/BBQ, etc.

We love all things taco. Tonight was a taco skillet! I used ground turkey and white rice bc that's what I had on hand and I topped with a scoop of Greek yogurt.

I've had this recipe saved for awhile but hadn't tried it yet, now I wish I hadn't waited!! Simple, quick, and oh so flavorful! A squeeze of lemon at the end was just perfect. Because I need a veggie with every meal I added some peas.

I love this time of year when I can just step out my back door and have fresh herbs. 😋. I grabbed some fresh pasta and pomodoro sauce from PastaBar Woodstock at the farmers market this weekend so I made some turkey meatballs and dinner was on the table in 30 minutes.

I had a lot of fresh veggies to use and on this hot day zero desire to use the oven. Pasta primavera to the rescue! This is a lightened version especially perfect for a summer day. I also sauteed a chicken breast in olive oil with some Italian seasoning, salt, pepper, and garlic for my meat loving boys.

Tonight we had fresh burgers seasoned with Tailgaters spice blend from The Spice & Tea Exchange of Crystal Lake. Delicious and quick, I froze extra patties for next time.

I completely forgot to take a picture before this was devoured! It's a family favorite and frequently requested. While this is a Midwest staple this version is a little different as it does not use premade ranch powder.

Meatballs are great for meal prep as it's easy to double (or triple!) a recipe and freeze extras. These are definitely a new family favorite! I doubled the sauce and served over brown rice and stir fry veggies.
