Here’s the recipe from yesterday’s reel, plus a few photos and videos of my time on the Camino’s Frances, Portuguese, and Primitivo I’m shamelessly trying to lure you 😉)
Tarte de Santiago:
4 eggs · 1 cup sugar · 2 cups fine almond flour (Kirkland or Bob’s Red Mill) · zest of 1 lemon · ½ tsp cinnamon · pinch of salt · powdered sugar to dust
1. Preheat oven to 350°F. Line and grease an 8” round cake pan.
2. Beat eggs and sugar on medium-high for 2 minutes until pale and airy (see video).
3. Fold in almond flour, lemon zest, and cinnamon — don’t overmix.
4. Pour into pan and bake ~30 min until a skewer comes out clean.
5. Cool completely, then dust with powdered sugar.
Bake time varies with pan depth, adjust accordingly.
