Red Velvet Cinnamon Rolls ❤️🍩

Ingredients:

For the Dough:

2 ½ cups all-purpose flour
¼ cup granulated sugar
1 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup unsalted butter, melted
1 large egg
1 cup buttermilk
2 tbsp red food coloring (or as needed)
1 tsp vanilla extract
For the Filling:

½ cup brown sugar, packed
2 tbsp ground cinnamon
¼ cup unsalted butter, softened
For the Cream Cheese Glaze:

4 oz cream cheese, softened
1 cup powdered sugar
2 tbsp milk
1 tsp vanilla extract
Instructions:

Prepare the Dough:

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the melted butter, egg, buttermilk, red food coloring, and vanilla extract. Mix well.
Gradually add the wet ingredients to the dry ingredients, stirring until a soft dough forms. If the dough is sticky, add a little more flour as needed.
Knead and Roll:

On a floured surface, knead the dough for about 5 minutes until smooth.
Roll the dough out into a rectangle (about 12x18 inches) to prepare for filling.
Add the Filling:

Spread the softened butter over the rolled-out dough.
In a small bowl, mix the brown sugar and cinnamon, then sprinkle evenly over the buttered dough.
Roll and Cut:

Starting from one edge, tightly roll the dough into a log. Slice the log into 12 equal pieces.
Place the rolls in a greased 9x13-inch baking dish. Cover and let rise in a warm place for about 30-45 minutes, or until doubled in size.
Bake:

Ground Beef and Gravy over Mashed Potatoes is a delicious and comforting classic!

Ingredients:
4-5 russet potatoes (peeled and cut into cubes)
2 tablespoons butter
1/2 cup milk (or more for desired consistency)
Salt and black pepper to taste
For the Ground Beef and Gravy:

1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 tablespoon olive oil
2 tablespoons all-purpose flour
2 cups beef broth
1 tablespoon Worcestershire sauce
1/2 teaspoon dried thyme
Salt and black pepper to taste
Instructions:

1. Make the Mashed Potatoes:

In a large pot, cover the potatoes with water and bring to a boil. Cook for 15-20 minutes, or until the potatoes are fork-tender. Drain the water completely.

While the potatoes are hot, return them to the pot and mash them with a potato masher or hand mixer. Add the butter and milk, beat until smooth and creamy. Season with salt and black pepper to taste. Set aside.

2. Make the Ground Beef and Gravy:

Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Add the chopped onion to the pan and cook for 2-3 minutes, or until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

Sprinkle the flour over the ground beef and vegetables and cook for 1 minute, stirring constantly. This will help thicken the gravy.

Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and cook for 5 minutes, or until the gravy thickens slightly.

Cranberry Glazed Chicken with Sweet and Savory Flavors

Ingredients:
8 chicken thighs or drumsticks, seasoned with salt, pepper, and paprika
1 cup fresh or frozen cranberries
Fresh thyme sprigs
For the Glaze:
½ cup sweet barbecue sauce
¼ cup soy sauce
¼ cup cranberry juice
2 tbsp maple syrup
¼ cup balsamic vinegar
¼ tsp sea salt
¼ tsp black pepper
2 garlic cloves, minced
½ tsp mustard
1 heaping tbsp dark brown sugar
Instructions:
Prepare the Glaze:
In a small saucepan over medium heat, combine all the glaze ingredients. Stir continuously until the sugar is dissolved and the sauce thickens. Remove from heat and set aside.
Preheat the Oven:
Set your oven to 375°F (190°C).
Sear the Chicken:
Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium heat. Sear the chicken on both sides until golden brown, but not fully cooked through. Be careful not to overcrowd the pan, and drain any excess fat or liquid.
Bake the Chicken:
Pour the prepared glaze over the chicken, then top with the fresh or frozen cranberries and sprigs of thyme. Transfer the skillet to the oven and bake for 35-40 minutes until the chicken is fully cooked. If necessary, drain off excess liquid before serving.

Heavenly Moist Fruitcake

A classic holiday treat that's sure to please.

Ingredients:
1 cup dried apricots, chopped
1 cup dried cranberries
1 cup dried cherries
1 cup candied peel (mixed)
1 cup walnuts, chopped
1 cup pecans, chopped
1 cup raisins
1 cup dark rum
1 cup orange juice
1/2 cup vegetable oil
2 large eggs
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon salt
Instructions:
Combine dried fruits: In a large bowl, combine the dried apricots, cranberries, cherries, candied peel, walnuts, pecans, and raisins.
Soak: Pour the rum and orange juice over the dried fruits and nuts. Cover and let soak overnight.
Preheat oven: Preheat your oven to 300°F (150°C). Grease and flour a 9x5 inch loaf pan.
Combine dry ingredients: In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, cloves, and salt.
Combine wet ingredients: In a third bowl, whisk together the eggs and vegetable oil.
Combine wet and dry: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Add soaked fruits: Add the soaked fruits and their liquid to the batter. Mix until well combined.

Ingredients:

For the Taco Filling:

1 lb ground beef 🥩
1 packet taco seasoning 🌮
1/2 cup water 💧
For the Cupcakes:

24 wonton wrappers 🥟
1 cup shredded cheddar cheese 🧀
1 cup shredded Monterey Jack cheese 🧀
1/2 cup diced tomatoes 🍅
1/2 cup shredded lettuce 🥬
1/4 cup sliced black olives 🍈
1/4 cup chopped green onions 🧅
Sour cream and salsa for topping 🥄
Directions:

1️⃣ Preheat your oven to 375F (190C). Lightly grease a 12-cup muffin tin.

2️⃣ In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add the taco seasoning and water, and simmer until the mixture thickens. Remove from heat.

3️⃣ Place a wonton wrapper into each muffin cup, pressing it into the bottom and up the sides. Add a tablespoon of the seasoned ground beef into each cup, then sprinkle with cheddar and Monterey Jack cheese.

4️⃣ Add another wonton wrapper on top of each cup, pressing down gently. Repeat the layering process with the remaining beef and cheese.

5️⃣ Bake for 10-12 minutes, or until the wonton wrappers are golden brown and the cheese is melted and bubbly.

6️⃣ Remove the taco cupcakes from the oven and let them cool slightly in the pan before transferring them to a serving platter.

7️⃣ Top each taco cupcake with diced tomatoes, shredded lettuce, black olives, and green onions. Add a dollop of sour cream and a spoonful of salsa on top of each for the perfect finishing touch.

Mexican Shredded Beef

Ingredients:
1 (3 pound) beef chuck roast
1 medium onion, sliced
4 cloves garlic, chopped
1 (4 ounce) can green chilies
2 chipotles, chopped
1/2 cup beef broth
2 tablespoon apple cider vinegar
2 limes, juiced
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon pepper

Instructions:
1. Layer sliced onion in the bottom of the slow cooker. Place chuck roast on top of onions. Sprinkle chopped garlic around the side of the beef.
2. In a small bowl, add green chilies, chopped chipotle, beef broth, vinegar, and lime juice, whisk together then pour over the roast. Sprinkle the top of the roast with cumin, oregano, smoked paprika, salt, and pepper. Place lid on the slow cooker and set the timer to 8 hours for low OR on high for 4 hours.
3. When the roast is done, remove it from the slow cooker and shred using 2 forks. Drain off 3/4 of the liquid from the pot. Add shredded beef back into the pot and gently toss with remaining juice. Serve immediately.

***Can be frozen in a freezer-safe container for up to 3 months.

🧅🥔 Perfect for busy nights!

6 large potatoes, thinly sliced

1 packet of Lipton Onion Soup mix

1/3 cup butter, melted

1 cup shredded cheddar cheese (optional)

1/2 cup chicken broth or water

Salt and pepper to taste

Cooking spray or butter for greasing

Begin by thoroughly greasing the inside of your slow cooker with cooking spray or butter to prevent sticking.

Wash and peel the potatoes (if desired), then thinly slice them, ensuring even thickness for consistent cooking.

In a large mixing bowl, combine the thinly sliced potatoes with the melted butter, ensuring each slice is coated. Sprinkle the Lipton Onion Soup mix over the potatoes and mix well to evenly distribute the flavors.

If using cheese, add the shredded cheddar to the potato mixture and blend it through.

Carefully layer the seasoned potatoes into the slow cooker and pour the chicken broth or water over the top. The liquid will help steam the potatoes to a tender finish while the slow cooker cooks.

Cover and cook on low for 5 to 6 hours or on high for 2 to 3 hours. Cooking times may vary depending on your specific slow cooker and the thickness of your potato slices.

Apple Pie Bombs 🍏🍂

Ingredients:

1 can refrigerated biscuit dough (8 biscuits)
1 1/2 cups apple pie filling (store-bought or homemade)
1/2 cup granulated sugar
1 teaspoon ground cinnamon
1/4 cup unsalted butter, melted
1/4 cup caramel sauce (optional, for drizzling)

For the Homemade Apple Pie Filling (Optional):
2 large apples, peeled and diced
1/4 cup brown sugar
1 teaspoon cinnamon
1 tablespoon butter
1 teaspoon lemon juice
1 tablespoon cornstarch
2 tablespoons water
Directions:

Make the Apple Pie Filling (if not using store-bought): In a medium saucepan, combine diced apples, brown sugar, cinnamon, butter, and lemon juice. Cook over medium heat for 5-7 minutes until the apples are soft. Dissolve cornstarch in water and add to the apple mixture, stirring until thickened. Remove from heat and let cool completely.
Prepare the Dough: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Separate the refrigerated biscuit dough into 8 individual biscuits. Flatten each biscuit into a 4-inch circle using your hands or a rolling pin.
Fill the Bombs: Place 1-2 tablespoons of apple pie filling in the center of each flattened dough circle. Carefully pull the edges of the dough up and around the filling, pinching them together at the top to seal completely. Shape into a smooth ball.
Bake the Bombs: Place the filled dough balls seam-side down on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until golden brown.
Coat in Cinnamon Sugar: While the bombs are baking, mix together the granulated sugar and cinnamon in a small bowl. Once the bombs are out of the oven, brush them with melted butter and immediately roll each one in the cinnamon-sugar mixture until fully coated.
Serve and Enjoy: Drizzle with caramel sauce, if desired, and serve warm.

Old Fashioned Butter Cake - 100 year old recipe!
2 cups all-purpose flour, sifted
1 1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter, softened
1 cup milk
1 teaspoon vanilla extract
2 eggs
Preheat oven to 350*F. Grease and flour two 8 inch x 2 inch baking pans and set aside.
In a large mixing bowl sift together the flour, sugar, baking powder and salt.
Add butter, milk, and vanilla. With a hand mixer, beat for 2 minutes, occasionally scraping down the sides of the bowl.
Add eggs and beat for 2 minutes more.
Pour batter into prepared pans, dividing equally between the pans. Bake 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven.
Cool in the pans for 10 minutes and then turn cakes out onto a cooling rack to cool completely.
Frost with your favorite frosting. I used my favorite chocolate frosting, the one on the back of the Hersey's cocoa can.
"Perfectly Chocolate" Chocolate Frosting
1 stick (1/2 cup) butter or margarine
2/3 cup Hershey's cocoa
3 cups powdered sugar (confectioners' sugar)
1/3 cup milk (plus an additional few drops to make a nice consistency)
1 teaspoon vanilla
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk if needed. Stir in vanilla. About 2 cups frosting

Ingredients:

1 lb ground beef
4 slices bacon, cooked and crumbled
1 cup shredded cheese
1/4 cup pickles, diced
1/4 cup onions, diced
1/2 cup lettuce, shredded
1/4 cup ketchup
1/4 cup mustard
6 taco shells
Instructions:
1️⃣ Cook Beef: Brown ground beef in a skillet, season to taste.
2️⃣ Prepare Tacos: Fill each taco shell with beef, bacon, cheese, and toppings.
3️⃣ Sauce: Drizzle with ketchup and mustard.
4️⃣ Serve: Enjoy these loaded cheeseburger-style tacos!

Nacho Cheese Beef Wrap

Ingredients:
1. 1 pound lean ground beef
2. 1 cup Nacho Cheese Sauce
3. 1/2 cup Sour Cream
4. 1 can Rotel (green chilis with diced tomatoes)
5. 1/2 cup chopped green peppers
6. 1/2 cup diced onions
7. 1 packet Taco Seasoning Mix
8. Nacho Cheese flavored Doritos (crushed)
9. 4 flour tortilla wraps
10. Shredded lettuce

Directions:

1. In a skillet, brown the ground beef. Drain any excess fat.
2. Add the diced onions and chopped peppers to the skillet, and sauté for 4 minutes.
3. Stir in the taco seasoning mix and combine well.
4. In a separate bowl, mix together the Rotel and Nacho Cheese Sauce until smooth.
5. Lay out the four large tortillas on a flat surface.
6. Spoon a layer of the Nacho Cheese mixture down the center of each tortilla.
7. Top with the ground beef mixture, sour cream, extra onions, chopped peppers, and crushed Doritos.
8. Fold in the sides of the tortillas and roll them up like a burrito, making sure they are tight.
9. Heat a skillet over medium heat and place the wraps in to toast. Cook until crispy on both sides.
10. Serve immediately with shredded lettuce and any other toppings you like.

For the Mushroom Cream Sauce:

2 tbsp unsalted butter
1 cup sliced mushrooms (button or cremini)
1 clove garlic, minced
½ cup heavy cream
¼ cup beef broth
1 tsp Dijon mustard
Salt & pepper to taste
Directions:
1️⃣ Season & Sear the Steaks: Rub the steaks with olive oil, salt, and pepper. Sear in a hot skillet for 3-4 minutes per side (adjust for desired doneness). Set aside to rest.
2️⃣ Cook the Shrimp: Melt 2 tbsp butter in the same skillet. Add garlic and shrimp, sprinkle with paprika, salt, and pepper. Cook 2-3 minutes per side until pink and opaque. Remove from the skillet.
3️⃣ Prepare the Mushroom Cream Sauce: Melt butter in the skillet, add mushrooms, and sauté until golden (about 4-5 minutes). Stir in garlic, then add heavy cream, beef broth, and Dijon mustard. Simmer 3-5 minutes until slightly thickened. Season to taste.
4️⃣ Serve: Place the steaks on plates, top with shrimp, and drizzle with the velvety mushroom sauce. Garnish with fresh parsley.
