Ingredients:
500g pork belly (with skin)
1 tsp salt
1 tsp sugar
1 tsp fish sauce
1 tsp ground pepper
1 tsp five-spice powder
1 tsp garlic powder (or 2 minced garlic cloves)
1 tbsp vinegar (or lemon juice)
Oil for frying
Instructions:
Prepare the pork belly:
Rinse the pork belly thoroughly and pat it dry with paper towels.
Score the skin with shallow cuts, being careful not to cut into the meat.
Marinate the pork:
Mix salt, sugar, fish sauce, pepper, five-spice powder, and garlic powder (or minced garlic).
Rub this mixture all over the meat side of the pork belly, leaving the skin untouched.
Apply vinegar (or lemon juice) on the skin to help it crisp up during frying.
Let the pork belly marinate for at least 30 minutes, or overnight in the refrigerator for better flavor.
Cook the pork belly:
Heat enough oil in a pan to submerge the pork belly. Use medium heat.
Fry the pork belly skin side down first, until the skin becomes crispy and golden brown (around 10-15 minutes).
Turn the pork belly over and fry the meat side until it’s fully cooked and browned.
Remove from the oil and place the pork belly on paper towels to drain excess oil.
