BLACKBERRY AND LEMON CAKE 🍋
It’s been far too long since I posted on here. It has been such a busy year so far, we’ve moved house and are currently knee deep in DIY. However, our gorgeous new garden has a solid supply of blackberries and I thought I’d try a blackberry and lemon cake, which is much needed fuel for all our DIY!
Blackberry filled sponge with lemon zest and a fluffy lemon buttercream filled with my version of blackberry coulis - definitely one to give a go 🍋
~Ingredients makes a 6 inch cake~
Cake
- 200g butter
- 200g caster sugar
- 200g self raising flour
- 4 eggs
- 1 lemon zest
- 80g blackberries
Buttercream
- 90g butter
- 280g icing sugar or until you have a pale yellow whipped cream
- 1/2 lemon juice
Blackberry “coulis”
- 100g blackberries
- 2tbsp caster sugar (to taste make sure to take the edge off the sharpness)
- splash of water
