Meatloaf Sandwich
My sister makes a mean turkey meatloaf and she recently made some for mom. With the left overs mom requested a sandwich and this is the creative juices result… French bread, homemade mayo, Munster cheese melted on the meat, fresh tomatoes, avocado slices and arugula! Mom loved it and we have a great idea for the next go around of meatloaf!

Figs for dessert
It’s summer and figs are in season. My mom tells me as a child she ate figs right out off the trees in the backyard, how lucky! For those of us who have to rely on the stores, hurry and buy some before they are gone! I stuffed mine with ricotta, honey, pistachios and fresh mint. Many other combinations would work great like Greek yogurt, walnuts and honey. Get some figs and experiment until you find the one that’s yours!!!!

Shrimp with veggie orzo
I’m always looking for quick, easy and healthy meals. Plus using a variety of veggies that cleans out the fridge is even more fun. I had one one baby bok choy, a couple of big green onions, a carrot, a zucchini, and some mushrooms. The cool thing is that these ingredients have the start of a great sauce, a mirepoix. I split the green onion into the white (onion) and green, the bok choy into the meaty cabbage (celery) and softer spinach like tops, and of course the carrots played themselves. The mushrooms and zucchini added some tasty, meaty elements. The orzo took on the veggies perfectly and made a great bed for the simply prepared shrimp. Best of all it passed the mom test with flying colors, it’s definitely getting added to the rotation! Give this a go and enjoy veggies in a whole new way!

Panzanella Salad
A Tuscan darling this bread salad is a great main or side dish during the heat of summer. Use day old bread and fresh, quality ingredients so the simplicity of it all can shine. I like onions, tomatoes, cucumbers, a touch of fresh garlic plus cheese like mozzarella or feta. But so many other variations work… adding olives, capers, and fresh basil. Add a protein, a glass of wine and enjoy!
