Chocolate Cheese gelato?! That's a new one. You'll be surprised to learn, though, that "cheese" in drinks, sweets, and even hot pot buffets is all the rage here in Asia. We tried to do the research, but all I can deem is that processed and natural cheese is popular in Japan and hence, popular here in Thailand as well, to be included in snacks and day to day creative dishes. Cream cheese is also a popular (not as eyebrow raising) ingredient in the Japanese snack scene.

So how does Chocolate Cheese or Japanese Cheesecake gelato taste? Delicious in a non over-indulgent kinda way. As typical with many Japanese desserts, this gelato is very light both in texture and flavors. Not overly sweet, think chocolate ice, and the "cheese" is pretty much a richer tasting milk. What I'd imagine Laughing Cow cheese tastes like when it's still "milk" (if that makes any sense at all 😂)🐄🥛!

Whenever you're in the presence of a Japanese cheese dessert (we've seen them in coffee and chocolate drinks too!), give it a try. It's a pleasant surprise... 😉

Caesar Potato Salad - the side that will quickly become your favorite for all occasions! We had a holiday cooking potluck party with Home Cook Aim's childhood friends and one of the guests at the show was this Caesar Potato Salad that delightfully wowed and surprised us on its simplicity yet a powerful impact to the palette!!! Thanks Chef Carol, for this delight!

Pro tip: stick with traditions and use a wooden salad bowl, fresh garlic, and GOOD QUALITY anchovies. Use the back of a spoon to crush the anchovies into the garlic. This combination allows the yummy aromas to permeate through the bowl and linger while you serve this salad. Eat with all your senses!

Caesar Potato Salad:

New potatoes
1 anchovy / guest / serving
1 garlic clove / guest / serving
Mayo
Dijon mustard
Lemon juice
Dill
Black pepper
Radish for crunch

Thais love to eat and you'll find that our social activities will always involve food! Aim's college friends gathered on Banthat Thong Rd to sample the old school traditional good eats in downtown Bangkok. One of the gals flew straight in from Australia 🌏 🦘!

Browse through to see all the Thai foods you don't typically find in Thai restaurants in the US. Bunthat Thong Rd gets our stamp of approval!!!

Shogupan with various dipping custards is all the rage here in Asia, especially here in Bangkok and we had the pleasure of visiting one of the more popular one called Nueng Nom Nua on Banthat Thong road. These snacks are served in cafes with flavored milk! Here, you see Home Cook Aim's Butterscotch Milk and the featured dipping sauce is made of salted eggs! Other varieties of this custard dipping sauce include cream cheese, Japanese milk, Thai Ice Tea, Pandan, and Phuket pineapple.

So what is Shogupan? Japanese milk bread! They're soft and fluffy and are often a bit sweeter due to the sugar or honey that's added. The secret is roux! Using either the Yudane or Tangzhong method, this secret ingredient is nothing more than heated gelatinized starch created by mixing bread flour with hot water and letting it sit to room temperature before mixing it into the bread dough. This roux is what makes shogupan extra fluffy, soft, slightly sweet, and lasts longer.

🎉 A Holiday Appetizer Like No Other! 🎉

Say hello to my Shrimp Toast Cannoli! A fun fusion that combines the crispy goodness of the famous Hong Kong shrimp toast with the charm of an Italian cannoli, topped with a refreshing Thai cucumber relish. 🥒🍤

Perfect for holiday parties, dinner gatherings, or even the Feast of the Seven Fishes! 🐟 An oldie recipe that's making a redebut because this dish is as flavorful as it is unique, and it’s sure to leave your guests impressed.

👩‍🍳 Here’s the recipe for you to recreate this fusion magic:

📋 Shrimp Toast Cannoli Recipe (8 pieces):

👉1lb shrimp - flattened and coarsely chopped
1/4 cup finely chopped green onion
1/4 cup finely chopped cilantro with stem
4 cloves of garlic chopped into paste
1 medium egg for binding (adjust as needed)
1 tbsp flour for binding (adjust as needed)
1 tsp salt for creating garlic paste (additional to taste)
Dash of soy sauce
1 tbsp sesame oil for brushing
8 slices of bread

Combine the first 8 ingredients in a mixing bowl and leave to rest. Cut crusts off bread and roll flat with a rolling pin. Pin two opposite corners together in the middle of the slice and secure them together with toothpick to create cannoli shells. Fill with shrimp filling with a piping bag and ziplock snipped at a corner. Brush the cannoli with sesame oil (optionally, add chopped garlic and cilantro to the oil for extra aromatics). Bake for 10 mins at 375°F to cook the filling. Then, up the temp to 400°F for 5 mins or until the cannolis are golden brown.

Quick Pickled Cucumbers:
1/2 cup thinly sliced cucumbers (more if you're a cucumber fan)
3 tbsp vinegar
1-1/2 tbsp sugar
Pinch of salt
Fresh chili peppers (optional)

Mix everything together in a small bowl and let sit for 5 minutes. Water from cucumber should be drawn to help create enough liquid for pickling. Adjust seasoning accordingly if your cucumber is extra watery. Top cannoli with pickled cucumbers before serving.

What do you think—will this be the highlight of your next gathering? Tell me in the comments!

We used to cook to feed our bodies. These days, we eat to occupy our time. The food we eat has so few nutrients in it these days. Our soils are not the living organisms that they used to be. Mix that with how far our foods travel to get to our plate.
When we cook, we need to get the most out of them. Making stocks and broths is an easy way to extract flavor and nutrients to add to recipes.

A lot of time, you can make these with scraps from cooking or asking your butcher for bones and scraps. This gives you the ability to adjust to your taste buds and health needs.
