Mini Carrot Cake Cheesecakes

Recipe

Ingredients:

For the cheesecake:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 eggs
1/4 cup sour cream
1 tsp vanilla extract
For the carrot cake:
1 cup all-purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1/2 cup oil
1/2 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 cup grated carrots
For the frosting:
1/4 cup butter, softened
4 oz cream cheese, softened
1 1/2 cups powdered sugar
1 tsp vanilla extract
Directions:
Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Start with the carrot cake layer: In a bowl, mix flour, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk oil, granulated sugar, brown sugar, and eggs until combined. Gradually add dry ingredients to wet ingredients, then stir in grated carrots.
Fill each cupcake liner with a tablespoon of carrot cake mixture and set aside.
For the cheesecake mixture: Beat cream cheese with granulated sugar until smooth. Add eggs, sour cream, and vanilla extract, and beat until combined. Spoon this mixture over the carrot cake layer in the cupcake liners.
