The Caribbean Appetizer Everyone Loves
Instructions
1. Prepare the Pico de Gallo
1. Combine tomatoes, red onion, jalapeño, cilantro, lime juice, and salt in a bowl.
2. Mix well and refrigerate until ready to use.
2. Cook the Chicken
1. Season the chicken with garlic powder, onion powder, paprika, oregano, salt, and pepper.
2. Heat olive oil in a skillet over medium-high heat.
3. Cook the chicken for 6–8 minutes, stirring occasionally, until fully cooked and lightly browned.
4. Set aside.
3. Make the Plantain Baskets
1. Peel the green plantains and cut them into 1½-inch (4 cm) chunks.
2. Fry at 325°F (163°C) for 4–5 minutes until tender but not browned.
3. Remove and drain.
4. While still warm, press each piece into a muffin tin or small bowl to form a basket shape.
5. Return to the oil and fry again at 375°F (190°C) until golden and crispy.
6. Season lightly with salt.
4. Assemble
1. Fill each crispy plantain basket with cooked chicken.
2. Top with shredded cheese.
3. Place under the broiler for 1–2 minutes, or until the cheese melts.
4. Finish with a spoonful of fresh pico de gallo.
Serving Suggestion
Serve immediately while the baskets are hot and crispy. Perfect as an appetizer, party snack, or game-day dish.
