Cheesy Jalapeño Ranch Chicken Poppers with a Creamy Dip!
Ingredients:
For the Chicken Poppers:
1 lb ground chicken
1/2 cup shredded cheddar cheese
1/4 cup cream cheese, softened
1/4 cup chopped jalapeños (from a jar or fresh)
1 packet ranch seasoning mix
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 egg, beaten
1 cup LC panko breadcrumbs
Vegetable oil, for frying
For the Creamy Dip:
1/2 cup mayonnaise
1/4 cup sour cream or Greek yogurt
1 tablespoon lime juice
1 tablespoon chopped fresh cilantro
1 clove garlic, minced
Salt and pepper to taste
Instructions:
Combine Ingredients: In a large bowl, combine ground chicken, cheddar cheese, cream cheese, jalapeños, ranch seasoning mix, garlic powder, salt, and pepper. Mix well.
Form Poppers: Form the chicken mixture into small balls (about 1 inch in diameter).
Bread Poppers: Dip each chicken ball in the beaten egg, then roll in panko breadcrumbs until fully coated.
Fry Poppers: Heat vegetable oil in a large skillet or deep fryer over medium-high heat. Fry the chicken poppers in batches until golden brown and cooked through (about 4-5 minutes). Remove and drain on paper towels.
Make the Dip: While frying the poppers, combine all dip ingredients in a small bowl and mix well. Season with salt and pepper to taste.
Serve: Serve the crispy chicken poppers hot with the creamy dip for dunking!
Tips & Tweaks:
For a healthier option, you can bake the poppers instead of frying. Just bake at 400°F (200°C) for about 15-20 minutes, or until cooked through and golden brown.
Add other spices to the chicken mixture, such as chili powder or cumin, for a different flavor profile.
You can use different types of cheese like Monterey Jack or pepper jack instead of cheddar.
Serve with other dipping sauces like hot sauce or ketchup for variety.
