🥗 Chicken, Brown Rice & Quinoa Power Bowl
Ingredients (1 serving)
2 chicken thigh fillets (boneless, skinless)
1 packet Imperial Grain Brown Rice & Quinoa (or ~1 cup cooked)
1 cup mixed vegetables (e.g. shredded carrots, kale/greens, beetroot, corn)
1 tablespoon walnuts (roughly chopped)
1 teaspoon sesame seeds
For the dressing:
1 tablespoon honey
1 tablespoon mustard
1–2 tablespoons Balsamic vinegar
Salt & pepper to taste Instructions
Cook the chicken
Season the chicken with salt and pepper.
Cook in an air fryer at 180–200°C (356–392°F) for about 15–20 minutes, until fully cooked (internal temp 75°C / 165°F).
Slice into pieces.
Prepare the rice
Heat the rice & quinoa according to the package (about 90 seconds in the microwave).
Prepare the salad
In a bowl, combine the vegetables, walnuts, and sesame seeds.
Make the dressing
Mix honey, mustard, balsamic vinegar, salt, and pepper until well combined.
Assemble the bowl
Add the rice, chicken, and salad to a bowl.
Drizzle with the dressing.

Cabbage Soup Detox 🥬✨

Ingredients:
2 onions
½ white cabbage
½ red cabbage
1 zucchini
2 carrots
4 celery sticks
1 bell pepper, chopped
1 bunch of kale
1 fresh tomato, chopped
A little tomato paste
A little garlic
Paprika
Black pepper
A pinch of cumin
A pinch of turmeric
Italian herbs
300g beef broth
A little ground beef (Bolognese-style), cooked

Instructions:
Chop all the vegetables and add them to a large pot. Lightly sauté the onion and garlic. Add the fresh tomato and tomato paste. Pour in the beef broth and enough water to cover all ingredients. Add the spices, mix well, and let it simmer until the vegetables are soft and the flavors are well combined. Finally, add the cooked ground beef.

🥞💪 Gluten-Free Protein Pancakes — Healthy, Fluffy & Delicious!
If you’re looking for an easy, healthy, and super tasty breakfast, these gluten-free protein pancakes are perfect! They’re fluffy, naturally sweet, and packed with protein to keep you full and energized.
Ingredients: • 2 bananas
• 2 eggs
• 2 cups gluten-free flour
• 1 cup yogurt
• 1 cup protein powder
• A little vanilla extract
• 1 teaspoon baking powder
Instructions:
Add all the ingredients into a bowl and mix well until smooth. Heat a non-stick pan over medium heat and pour some of the batter to form pancakes. Cook for a few minutes on each side until golden brown.
Decorate with anything you like — fresh fruit, nut butter, honey, dark chocolate, or extra yogurt. Enjoy! ✨

Greek Fasolada (Bean Soup)

Ingredients (serves 4–6)

500 g dried white beans (medium or large)
2 carrots, sliced into rounds
2 onions, finely chopped
1 leek, sliced into thin rings
2–3 celery stalks (or celery root), choppe
40 g chopped tomatoes (or 1 can)
2 tbsp tomato paste
100 ml olive oil (plus extra for serving)
2 bay leaves
Salt & freshly ground pepper

Optional: 1 bell pepper (red or green), chopped

Method

Soak the beans: Place the beans in plenty of water the night before. Let them soak for at least 8–12 hours.

Pre-boil: The next day, rinse the beans, put them in fresh water, and boil for 10 minutes. Drain and discard this water (this makes the soup lighter).

Cook the beans: In a large pot, add the beans with fresh hot water. Add carrots, onions, leek, celery, garlic, and bay leaves. Simmer for about 40 minutes.

Add tomato & oil: Stir in the chopped tomatoes, tomato paste, and olive oil. Continue simmering for another 30–40 minutes, until the beans are tender and the broth thickens.

Season: Add salt and pepper near the end of cooking (so the beans don’t harden). Adjust the water level – the soup should be hearty and slightly thick, not watery.

Serve: Drizzle with raw olive oil before serving. Enjoy with bread, olives. 👩‍🍳🔪👌🇬🇷🧿💙

Kourou Cheese Pies

Ingredients

For the dough:

500 g self-rising flour

250 g butter (soft)

200 g Greek yogurt

1 egg

1 tsp salt

For the filling:

250 g feta, crumbled

150 g ricotta or anthotyro (optional)

1 egg

Pepper

For topping:

1 egg (beaten)

Sesame seeds (optional)

Instructions

1. Mix butter, yogurt, and egg until creamy.

2. Add flour + salt, knead into a soft dough.

3. Mix filling ingredients in a bowl.

4. Roll small dough balls into circles, add filling, fold into half-moons, press edges with a fork.

5. Place on a baking sheet, brush with egg, sprinkle sesame.

6. Bake at 180°C / 350°F for 25–30 min, until golden.
