Grilled Chicken & Veggie Power Bowl with From Mommy’s Dressing
Serves: 2–3
Prep Time: 20 minutes (plus 30 mins marinating)
Cook Time: 15–20 minutes
Ingredients
For the chicken marinade:
2–3 boneless, skinless chicken breasts
3 tablespoons From Mommy’s Original Salad Dressing (or Herb/Sugar-Free version)
1 teaspoon garlic powder
½ teaspoon paprika
Salt & pepper to taste
For the bowl:
1 cup cooked quinoa, couscous, or brown rice
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
1 avocado, sliced
1 cup shredded lettuce or baby spinach
Optional: crumbled feta or toasted seeds/nuts
Extra dressing for drizzling
2–3 tablespoons From Mommy’s Dressing
Instructions
Marinate the chicken:
Combine chicken breasts with From Mommy’s Dressing, garlic powder, paprika, salt, and pepper. Let sit for at least 30 minutes (up to overnight in the fridge for extra flavor).
Grill the chicken:
Heat a grill pan or braai. Grill chicken for 6–8 minutes per side, or until fully cooked and nicely charred. Rest, then slice.
Assemble the bowls:
Start with a base of grains.
Top with lettuce/spinach, grilled chicken, cucumber, tomatoes, and avocado.
Sprinkle with optional feta or seeds.
Drizzle generously with From Mommy’s Dressing just before serving.
