Cheat Air Fryer Pistachio Cannoli (Tortilla Wraps)
Ingredients:
6 large flour tortillas (burrito size)
1 cup ricotta cheese
1/2 cup powdered sugar
1/4 cup chopped pistachios
1 teaspoon vanilla extract
1/4 cup mini chocolate chips (optional)
Cooking spray
Instructions:
1. In a medium bowl, combine the ricotta cheese, powdered sugar, chopped pistachios, and vanilla extract. Mix thoroughly until well combined. If using, gently fold in the mini chocolate chips.
2. Lay out one flour tortilla on a flat surface. Using a spoon or small spatula, spread a thin layer of the ricotta mixture evenly across the center of the tortilla, leaving about a 1-inch border on all sides. Avoid overfilling, as this will make it harder to roll and may cause leaks during air frying.
3. Carefully roll the tortilla tightly from one end, tucking in the sides as you go to create a log shape. Repeat this process with the remaining tortillas and filling.
4. Lightly spray the cannoli with cooking spray. This helps with browning and prevents sticking.
5. Place the rolled tortillas seam-down into the air fryer basket, ensuring they are not overcrowded. If necessary, air fry in batches to ensure even cooking.
6. Air fry at 370°F (190°C) for 5-7 minutes, or until the tortillas are lightly golden brown and crispy. Keep a close eye on them to prevent burning; cooking times may vary depending on your air fryer model.
7. Remove the cannoli from the air fryer and let them cool slightly before serving. They are best served warm. Dust with extra powdered sugar and chopped pistachios, if desired.
